Cinnamon Raisin Quick Bread

I wanted to bring a little something to the office but only wanted to use things I already had on hand, Cinnamon Raisin Quick Bread to the rescue. Now this did not turn out to be the prettiest thing I've ever baked (Mary's was prettier), but it was tasty! It whips up in the time it takes the oven to heat, and I didn't even use the mixer, just a spatula. I saved this recipe last July and this is the first time I've made it, I should have tried it sooner! It would be a perfect treat for coffee with Ma.
The recipe is easy to split in half and I only made one loaf.
My only suggestion is to add most of the cinnamon/sugar mixture inside the cake, use only a little on top.
Mary says this is best eaten the day it's made-not a problem:@)

Cinnamon Raisin Quick Bread-from One Perfect Bite
4 C A/P flour
2 C sugar-divided
2 tsp baking soda
1 tsp salt
2 eggs
2 C buttermilk
1/2 C oil
1/2 C raisins
3 tsp cinnamon
  1. Mix flour, 1 1/2 C sugar, baking soda and salt in large bowl. 
  2. Mix eggs, buttermilk and oil in another bowl. 
  3. Stir wet into dry until just moistened, fold in raisins.
  4. Pour half the batter into 2 greased 8 x 4 loaf pans. I used Baker's Joy spray, still loving it!
  5. Sprinkle with half the cinnamon and sugar mixture.
  6. Pour in the rest of the batter, sprinkle the rest of the cinnamon and sugar on top.
  7. Run a knife through batter to swirl.
  8. Bake at 350 for 55-60 minutes or until a toothpick comes out clean.
  9. Cool 10 minutes before removing from pan to a rack to cool.

    Holy crap girl...
    I was on the edge of my seat the whole game. Was basically lost it with 30 seconds to go. When we made that touch down I could here shouts and screaming in the neighborhood. It was awesome. Baltimore is in shock and feuled up this morning! : )

  18. This is my kind of bread, no yeast or mixer involved! I'd mix up a loaf right now but I'm afraid I'd eat the whole loaf :)
