Cream cheese and refried beans mellow the Rotel very nicely.
It's great hot and equally good at room temp, perfect party food!
While this might not be the most colorful of recipes, guys will think it's a work of art:@)
5 slices bacon, fully cooked
(1) 16 oz can refried beans
*(1) 10 oz can Rotel, drained well
4 oz cream cheese
1/2 C cheddar, shredded
- Cook bacon till crisp, remove from pan to paper towel, cool and crumble. Set aside.
- Add beans, drained Rotel and cream cheese to skillet. Heat and stir until cream cheese melts.
- Pour bean mixture into 9" pie plate, top with shredded cheese and bacon.
- Serve warm with tortilla chips and sliced veggies.
- *It calls for Hot Diced Tomato with Habenaro Rotel... Not in my world folks. I used regular, if you like it extra hot-enjoy!
- They don't specify if we should drain the bacon fat before adding the beans... I chose to pour most of it out and left about two teaspoons.
- This is another recipe that I think the leftovers (if there are any) would be great on a bagel.
I am sticking this one in my recipe folder right this minute. We love a good bean dip and I used some Rotel just last night with black beans, onions, and cheese to add to our Mexican dinner. I can only DREAM what cream cheese and bacon will do to this, oh my my my. I will be serving this one up in the next day or so, as soon as I can get to the grocery to pick up some more Rotel. Everything else is in my refrigerator or pantry as we speak.

Yum, this is the kind of dip that is a huge hit at a party. People are so used to eating healthy, that when they have a chance to eat something delicious it's hard to stop. I am making this one for my next family gathering. Great recipe!

In reply to your blogger question, on my comment page for each post I see two little words "reply" and "delete" under each person's comment. Then, if I click on reply, a little box opens and my response would be indented underneath that comment. In settings I have the comments set as "embedded." Except for not being able to comment or get comments or find my blog one day, I actually like the new blogger interface. It seems cleaner--once you learn what all the little symbols mean. Linda
