Holiday Shortbread Cookies

Top-O-The-Mornin' to ya! So, Plan A was... With St. Patty's Day coming up I thought it would be fun to use a clover shaped disc with my spritz cookie press. I made two attempts at a Mint Chocolate Chip cookie and both times the cookies completely flattened out. No use crying over failed cookies... I moved right on to Plan B, which was to try this amazing cookie I found at Grandma Loy's Kitchen. Love it!

Holiday Shortbread Cookies 

This is a very thick dough, to show you just how thick...
My lovely assistant Earl says "hey, there's nothing to lick off the beater! 'Sup wit dat???"

Notes: These are very good, not overly sweet. I suggest making the balls smaller than you think they should be, flatten it out with your fingers a bit and then the cookie plate. I did dip the plate in flour but the dough did stick to it most of the time, I just carefully peeled the cookie off and put it back on the cookie sheet. Next time I'm going to try dipping it in powdered sugar. This is a nice shortbread recipe!

Holiday Shortbread Cookies
1 C butter, softened
3/4 C brown sugar, packed
1 egg
1 tsp vanilla
2 1/4 C flour
2/3 C cornstarch
1/2 tsp salt
  1. Cream butter and sugar till very creamy.
  2. Add egg and vanilla, mix well.
  3. In separate bowl mix flour, cornstarch and salt. Mix well and slowly add to wet mixture. Dough will be very stiff.
  4. Form into a ball and wrap in plastic wrap. Chill for several hours. 
  5. Pinch off pieces and roll into 1" balls. 
  6. Place on foil lined baking sheet.
  7. Flour a plate from your cookie press and press each ball until it's about 1/4" thick.
  8. Bake at 300 degrees for 20-25 minutes, until just barely brown at the edges.
  9. Makes about 5 dozen cookies. 
Oh, and if you'd like to try the mint clovers, just use your favorite spritz recipe and sub half mint extract for the vanilla. 
I added a chocolate chip to the center of each petal of the clover.

    Both cookies look delicious. I don't have a cookie press. How dumb since I love to make cookies so much.

  2. I am the Goddess of Things Going Wrong in the Kitchen so I'm no help there, but I will tell you that they look DELICIOUS! :)

    We once had a baker come into the senior center and we made shortbread with LAVENDER! Nummy!

  3. My favorite cookies are shortbread cookies. I have no idea what happened to the flat ones and if I were you I wouldn't care. I told you several months ago that I needed a cookie press. I still haven't gotten one. Will my life finally be complete when I've found it?

  8. Shortbread cookies don't last long around here. Hubby puts them in a bowl, then pours milk over them. I feel like I'm living with Jethro Boudin from the Beverly Hillbillies!!

  11. Sometimes if you chill the cookies in the fridge before you bake them they won't spread as much. I bet they are all gone though. Very pretty color.

  14. I used to use my cookie press to make shortbread shamrock shaped cookies when my kids were young and I found that the dough had to be pretty cold when pressed and placed in the oven. Sometimes I would press them out and then put the cookies tray in the freezer for a minute to firm them up. That way they kept their shape when baked. You alternative cookies are just as cute! If one was really ambitious they could highlight the shamrock design with a little green food coloring and a small paint brush.
