Amish Coleslaw with Celery, Horseradish and Lemon-Diabetic Friendly Option

We're always looking for new and different cabbage recipes, and while the kids are fond of the coleslaw they grew up eating, this Amish Coleslaw was very good! Loved the addition of lemon and I could really taste the horseradish (although I was in the minority on that). As we're coming into warmer weather, this salad is nice and crunchy and cold. I think you'll like it if you try it folks:@)
I must have tossed my lemon pepper a while ago, so I just used the zest from about half a lemon and extra black pepper.
While it doesn't call for salt, you might want to add a little.

Amish Coleslaw-from Every Day Diabetic Recipes
3 1/2 C shredded cabbage
3/4 C shredded carrots-mine was a little light on the carrot
1/2 C finely diced celery-mine was cut into match sticks
1/4 C finely diced onion
1/2 C fat-free mayonnaise-I used regular
1/4 tsp lemon pepper seasoning-I added some lemon zest and extra pepper instead
2 tsp horseradish
2 packets Splenda-I added about 1 Tblsp sugar
1 Tblsp white vinegar-didn't pay attention and used cider vinegar 
1 tsp celery seed
pinch of salt-optional
  1. Mix cabbage, carrot, celery and onion in bowl.
  2. Mix everything else together in another bowl, then combine with veggies. Mix well and store in fridge for at least one hour. 
  3. I just tossed everything into one big bowl and mixed it up.
Eat well and have a happy day:@)

  4. That sounds like a coleslaw with punch! I know I would love the horseradish bite to it! My kids have never caught on to coleslaw, but hubby loves it!

  6. What a smart idea to use real lemon and pepper, so much brighter than packaged lemon pepper seasoning! I love coleslaw, especially on or with BBQ, and this recipe sounds like it has a good balance of zing!

  7. I love cole slaw in the warmer months! My favorite cole slaw recipe actually uses cider vinegar and not white :) I have to try the horseradish, it sounds like a great addition.
