My Personal PIGskin Challenge-Year 2

Hey everyone! I had fun last year with my Personal PIGskin Challenge trying a new dip for each week of football. You can click HERE to see the different things I made. Well, here we are at the beginning of another season and even if you don't like football, I hope you find some party and holiday inspiration!

Cajun Meatballs!

That's right, this year's challenge is...
Meatballs!
I'm thinking appetizers, munchies and fun toothpicks! Although sandwiches and soups are good too:@)
Wouldn't a meatball tasting party be fun, all different meats and flavors lined up!

1 lb lean ground beef
1 1/2 tsp hot pepper sauce
2 Tblsp Cajun seasoning
1 Tblsp Worcestershire Sauce
1 Tblsp dried parsley
1/4 C finely chopped onion
1/4 C fresh bread crumbs
1/4 C milk
1 egg
1/2 C B-B-Q sauce
1/2 C peach preserves
  1. Preheat oven to 350 degrees and lightly grease a medium sized baking sheet.
  2. Mix everything except the B-B-Q sauce and preserves.
  3. Form into golf ball size meatballs and place on the baking sheet.
  4. Bake 30-40 minutes, or until no longer pink in the middle.
  5. Mix B-B-Q sauce and preserves in small bowl. Place meatballs in serving dish, cover with sauce. Toss to combine.
Notes:
  • I used homemade nectarine jam, any stone fruit will do. If I was making these for a party I might send the jam through the food chopper to thin the fruit a little.
  • I ended up with 18 meatballs and would make them more "bite size" next time. 24 is probably perfect.
  • These meatballs are very flavorful, you can really taste the herbs! I used Emeril's Essence for my Cajun Seasoning. 
  • What I love about these: No one will be looking around for the spaghetti, there's no doubt these ain't yo Momma's meatballs! There's a little heat and you can taste the thyme. If your crowd is into hot I could see adding some cayenne powder or hot sauce to the glaze. 
Earl's so excited, he loves football almost as much as he loves to eat!

  3. Here we go again!!! LOL Can't wait to see all the great ways you come up with to serve meatballs.

    I have one of the easiest & tasty methods I've ever heard of. I'll have to blog about it soon. The guys scarf them up every time I serve them.
