Philadelphia Pepper Hash

Hey everyone! Planning for Labor Day, a B-B-Q or looking for a great tailgating side dish? Oh yea, I can smell football season!!! I actually found this post unpublished from last summer, so I thought I'd share it for On The Menu Monday! It's great with sandwiches and goes well with grilled food.

What is Philadelphia Pepper Hash?
You could say it's a sweet, yet vinegary, no mayonnaise, alternative to cole slaw. 
It does require grating the veggies, or doing a lot of chopping, and has the consistency of relish.
I'm curious to see how this will look using my new KA food processor!

Philadelphia Pepper Hash
1 medium cabbage (Google says medium is 2 lbs-ish... I'd go light)
2 medium bell peppers (one red, one green)
1 small carrot (optional, I like the color)
1/2 C vinegar
1/2 C sugar
1 tsp mustard seed
1 tsp celery seed
1/2 tsp salt
1/4 tsp pepper

Grate cabbage and pepper (and carrot if using) till medium coarse.
Mix vinegar, sugar and spices in pan, place over low heat till sugar melts. Remove from heat.
Mix all, refrigerate over night.
Makes approximately 1 1/2 quarts.
