Orange Salad with Smoked Paprika Vinaigrette

Bloggy Buddy Sam has made a few gorgeous Orange Salads on her blog. She uses several varieties and colors of oranges, as well as gourmet vinegar and pepper flakes. They are truly inspiring and I encourage you to stop byMeanwhile, here at Pig In Mud... I had some little oranges ~variety unknown~ but they needed to be used up were sweet and seedless, so I decided to make due with what was on-hand. I opted for red wine vinegar, yellow onion and didn't have any cilantro. While not shown in the pics, my oranges were also sprinkled with a little chipotle powder before serving-a nice addition:@)

While it might seem like an odd combination, the oranges and onion were very good together,
and I liked soaking the onion for a while to tame it little.

I do think you could cut back on the amount of dressing though.
Planned on using my leftover dressing as a marinade for pork but I ended up spilling it-total bummer.
This bright sunny salad is seriously enjoyable folks, I think you'll like it if you try it.

Orange Salad with Smoked Paprika Vinaigrette-from My Carolina Kitchen
Salad:
1/8th of a small red onion, sliced paper thin
3 juicy oranges
2 Tblsp fresh cilantro leaves, chopped-I didn't have any

Vinaigrette:
1/2 tsp orange zest
3 Tblsp fresh orange juice
2 Tblsp good sherry vinegar-I used red wine vinegar
1 tsp Spanish sweet smoked paprika
1/2 tsp sugar
2 drops hot sauce, or to taste
salt to taste
1/2 C extra virgin olive oil
Aleppo chili flakes-I used chipotle powder
  1. Soak onions in small bowl of ice water, at least 30 minutes-up to 2 hours.
  2. Mix vinaigrette, shake until salt dissolves, set aside.
  3. Slice peel and pith off of oranges, cut slices about 1/4" wide. Arrange slices on serving platter.
  4. Drain and pat onions dry. Sprinkle on top of oranges.
  5. Shake vinaigrette, drizzle some over salad. Set the rest aside for serving at the table.
  6. Sprinkle top of salad with pepper flakes (or chipotle powder).
Oranges, they're not just for breakfast any more...
Have a happy day:@)

  4. So glad you liked the salad Lynn. I always have some vinaigrette left-over and I just pop in the 'frig for later. I'll make a note of that on the blog. I bet the chipotle powder gave it a nice twist and as you found out, any oranges will work.
