While it might seem like an odd combination, the oranges and onion were very good together,
and I liked soaking the onion for a while to tame it little.
I do think you could cut back on the amount of dressing though.
Planned on using my leftover dressing as a marinade for pork but I ended up spilling it-total bummer.
This bright sunny salad is seriously enjoyable folks, I think you'll like it if you try it.
Salad:
1/8th of a small red onion, sliced paper thin
3 juicy oranges
2 Tblsp fresh cilantro leaves, chopped-I didn't have any
Vinaigrette:
1/2 tsp orange zest
3 Tblsp fresh orange juice
2 Tblsp good sherry vinegar-I used red wine vinegar
1 tsp Spanish sweet smoked paprika
1/2 tsp sugar
2 drops hot sauce, or to taste
salt to taste
1/2 C extra virgin olive oil
Aleppo chili flakes-I used chipotle powder
- Soak onions in small bowl of ice water, at least 30 minutes-up to 2 hours.
- Mix vinaigrette, shake until salt dissolves, set aside.
- Slice peel and pith off of oranges, cut slices about 1/4" wide. Arrange slices on serving platter.
- Drain and pat onions dry. Sprinkle on top of oranges.
- Shake vinaigrette, drizzle some over salad. Set the rest aside for serving at the table.
- Sprinkle top of salad with pepper flakes (or chipotle powder).
Your dish sounds yummy! Color attracts me a lot. Unique combination...

ReplyDeleteLove that combination and the salad looks sunny and bright.

So glad you liked the salad Lynn. I always have some vinaigrette left-over and I just pop in the 'frig for later. I'll make a note of that on the blog. I bet the chipotle powder gave it a nice twist and as you found out, any oranges will work.
