Guiltless Buffalo Chicken

Hey everyone! True confession time... My name is Lynn and I am a Buffalo Wing Addict. Yep, they're one of my favorite things in the world to eat! As soon as my go-to wing place cost $1 for each wing *yikes* I decided I'd start making them for myself. I also figured I could make them healthier so I use boneless skinless chicken breast and don't bread, flour or deep fry them.
These are really good, they've even been "guy approved":@)

I've used 3 good size tenders, I figure they equal one large breast.
Cut your tenders into cubes, approximately 1/2" thick. If you use whole chicken breast, slice them into strips about 1" wide (lengthwise, about 3 per breast), then into 1/2" cubes. Salt and pepper to taste.

Heat a 10" skillet to medium high (6-7 on my electric stove) and add 1 1/2 tsp olive oil.
Add the chicken in a single layer trying to give each piece a little room so they don't steam.
Don't try to move the chicken before it releases from the pan willingly. It will let you know when it's ready to be turned. Cook till just done, approximately 5 minutes and remove from skillet.
The key is- don't over cook the chicken. Remember there will be carry-over cooking once you 
take it out of the pan.

Wipe out the skillet with a paper towel.
Add 1 tsp butter and 3 Tblsp of your favorite hot sauce (Crystal's has zero carbs). 
Stir the butter and sauce together until well incorporated then let it cook for a couple minutes so it thickens.

Remove skillet from heat, add the chicken back to the pan and stir to thoroughly coat all the pieces.
See how thick that sauce is on the sides of the skillet-yum!
Add to a platter and serve with celery and bleu cheese dressing if desired.
Truly a fun munchie to try for the next football game!

  19. That looks like an easy enough recipe! I saw a feature on the chain restaurant Buffalo Wild Wings...to my surprise they batter dip, and fry them... then the coatings go on the outside and that's it. I thought maybe they marinated them or something. Your recipe looks great..will have to give it a try!

  21. Those look great! I like hot wings but don't care for the messy fingers and dealing with the bones. Yours definitely would be healthier since they're minus the skin. I like the simplicity of the recipe -- sounds like a perfect Labor Day treat!

    I have to admit that I am not a cook and yes, I can cook but it is not one of my callings! I love to decorate, wall paper and paint rather than cook BUT this looks good and it is easy to make. I just may try it for when my boys come over on Sunday for a little cook out.

  25. We love buffalo wings. This is a very good light version that I will trying straight away. We're big Patriot fans and watch every game. These will go over big I'm sure. I have never heard of Crystal Hot Sauce, I'm assuming its like Frank's. Thanks great recipe!!

  34. I had to pop back in to tell you that I'm making this today for our supper after church tonight. I found a nice mild *hot* sauce (I still think thats an oxymoron?) that works great for us.

    Thanks for all your wonderful recipes, Lynne. I can't tell you how many times I put that splash of water into the sunny side up eggs & last night I told 5 more people how to do it.
