What to do with all that yummy fruit? Besides munching of course...
I'm here to help ya folks!
- It would all be good in oatmeal, especially the apples and peaches.
- Dried Apricot Jam
- Brie Dip with Apricot Topping
- Bread Machine Panettone-I used this recipe with the dried peaches-boy that's good!
- Date and Nut Bread/Cake
- Oatmeal Cookies, exchange the Raisinettes for chopped apple, apricot, prunes, peaches or cranberries
- Bread Pudding
- Bacon Wrapped Apricots Appetizer
- White Chocolate and Apple Popcorn
3/4 C chopped nuts, either walnuts or pecans-I used walnuts
8 oz pitted, whole dates, chopped-mine were roughly chopped
1 1/2 tsp baking soda
1/2 tsp salt
1/4 C shortening-can sub butter, Kitty uses butter flavored shortening, I used regular shortening
3/4 C boiling water
2 eggs
1/2 tsp vanilla
1 C sugar
1 1/2 C A/P flour, sifted
- Combine nuts, dates, baking soda and salt to mixing bowl.
- Add shortening and boiling water, let sit for 15 minutes, stir.
- In separate bowl, beat eggs slightly and stir in vanilla. Stir in sugar and flour.
- Add wet ingredients to dry, stir to combine but don't over mix.
- Pour batter into greased 9x5 loaf pan.
- Bake at 350 degrees for 1 hour or until toothpick comes out clean.
- Cool in pan for 15 minutes before removing from baking dish onto rack.
I would like to thank Kitty for sharing a favorite family recipe and Broadway Basketeers for gifting me this dried fruit and nut tray. My honest opinion is, it's a thoughtful gift, and a very tasty one too:@)

Your bread looks so moist and delicious Lynn, I wish I had a slice this morning! What fun to receive that beautiful fruit and nut tray, it's a beauty and would make a wonderful gift!
ReplyDeleteMy mom loved using dates in baking! This bread reminds me of her--I MUST bake a batch in her honor. Yeah, we'll be rooting for the Saints, too. Drew Brees went to Purdue, my oldest's alma mater.
ReplyDeleteThe bread looks delicious. My mom used to make a date and nut cake that was drizzled with an orange glaze. It was not great the day it was baked, but after sitting for a day and having the glaze soak into the cake, it was fantastic

ReplyDeleteI love to use dates in baking too and Kitty's recipe sounds wonderful! We were at a birthday party for our 3-year-old grandson last night and our 6 (almost 7) year old grandson was wearing a Drew Brees jersey. He's hoping for a Saint vs Patriots Superbowl ;)
