June Celebrity Cook-Along

Hey everyone! I think it's time to highlight a guy, how about the Pillsbury Doughboy! Anyone that has his own balloon in the Thanksgiving Day Parade is a Celebrity in my book! And hey now, let's face it, if ya can't come up with something to make from Pillsbury... you just don't want to cook.
This is wide open, you can go to Pillsbury.com, use a cookbook, a magazine, a Bake-Off recipe, a recipe from an advertisement or simply use a Pillsbury product (listing what it is, ie: pie crust, flour, crescent rolls, etc.) and your own recipe.

I'll be making a great looking appetizer that can be enjoyed year-round.
This is from the 1994 Bake-Off, a kicked up version of Bruschetta.
Tomato-Topped Onion Bread Wedges
Tomato-Topped Onion Bread Wedges
Salad:
1 Tblsp olive or veggie oil
2 large tomatoes, chopped (about 2 cups)
1 medium red pepper, chopped (1 cup)
1 Tblsp chopped fresh parsley
1 Tblsp tarragon vinegar
1/2 tsp dried basil leaves
1/2 tsp dried oregano leaves
1/8 tsp pepper

Bread:
1/3 cup olive or veggie oil
1/3 cup chopped onion
1 clove garlic, minced
1 can (13.8 oz) Pillsbury refrigerated classic pizza crust
1/4 cup Parmesan cheese

Directions:
  1. In 10" skillet, heat 1 Tblsp oil over med heat. Add tomatoes and bell pepper, cook 10-15 mins, stirring occasionally, until most of the liquid has evaporated. Remove from heat and stir in remaining salad ingredients. Place in medium bowl to cool. Wipe skillet clean with paper towels.
  2. Heat oven to 400 degrees. In same skillet heat 1/3 cup oil over med heat. Add onion and garlic, cook and stir 2-3 mins or until onion is tender. Set onion mixture aside. With 1 Tblsp of the oil from onion mixture, grease a 9" round pan.
  3. Unroll dough, fold in half. Place in pan, gently press evenly in pan. With fork, poke holes in dough every 2". Spread onion mixture evenly over dough. Sprinkle Parmesan cheese over top.
  4. Bake 18-20 minutes or until golden brown and slightly puffed. Cool slightly, about 10 minutes. Remove from pan, place on serving plate. Top warm bread with salad.

  3. I actually entered the Pillsbury Bake-Off several times. I think they lost my contact information. Why else haven't they called?

    Flaky Mushroom Bread

    One can Pillsbury Refrigerated Crescent Dinner Rolls
    One quarter cup softened butter
    One bulb fresh garlic
    A pinch of Kosher salt
    2 T olive oil
    2 teaspoons dried Italian seasoning
    One red onion, very thinly sliced
    4 ounces button mushrooms, sliced
    4 ounces exotic mushroom of choice (e.g., oyster, portobello, Italian brown, etc.), sliced.
    One half cup freshly grated Parmesan cheese

    Preheat oven to 400 degrees.

    Cut the bulb of garlic in half horizontally and place on a square of aluminum foil. Sprinkle each half with olive oil and salt. Wrap the halves securely in the foil, place in an oven proof baking dish and roast in preheated oven for 20 minutes. Remove from oven, open foil and allow garlic to cool. Squeeze the garlic cloves into a small mixing bowl and mash thoroughly with the tines of a fork. Add the softened butter and Italian seasoning and combine well. Set aside.

    Reduce oven temperature to 350 degrees.

    Open the can of crescent dinner rolls and unroll the dough. Using a baking stone or a 15x10x1” cookie sheet lined with non stick aluminum foil, arrange the triangles, edges touching, to form a rectangle. Press the edges to seal them together and work the rectangle into a solid sheet of dough measuring approximately 9x12 inches.

    Using a knife, spread the roasted garlic butter over the entire surface of the crescent roll dough. Sprinkle the sliced onions over the garlic butter, pressing down slightly. Liberally scatter the assorted mushrooms over the onions, finishing with the grated Parmesan cheese.

    Place in the preheated oven and bake at 350 degrees for 30 to 35 minutes. Cut into generous squares and serve as an accompaniment to your favorite meal.

  11. Oh my a celeb chef I've actually had in my home! (for some reason we have collected many of those giveaways of Doughboy - my kids drank milk from a cup shaped like him and most recently, the dogs have been chewing on a 'doll' of him) Baking? Not unless Pillsbury does it first! MY MOST fav 'recipe' is a variation on Paula Deen's monkey bread and it's mostly what you want to do with it-

    2 rolls of Pillsbury biscuit dough (I've made it will all sorts, so far they all work, but a basic flaky one seems to be best)
    Cream cheese
    BUTTER!
    Brown sugar, cinnamon, 'white' sugar, whatever you like in a cinnamon roll mix (I add nutmeg, ginger and all spice - but then I make it at Christmas)
    nuts, cherries, whatever you like to jazz it up.
    Bunt pan

    Grease bunt pan, mix dry ingredients, cut butter into small cubes.

    Put half the butter and half the dry mix into the bottom (which will be the top) of the bunt pan.
    Tear each biscuit in half wrap it around a small dob of cream cheese, drop into bunt pan. After a 'layer' of one can, do the butter and dry mix again, then the cream cheese layer, bake, flip, EAT.

  21. Hi Lynn, It sounds like your Paula Dean cook off was tons of fun. I had a recipe to make and fell apart because I only had one stick of butter. Sigh! On top of that we left for FL. on the 15th. I will be in Maine for the next cook/bake off and I hope I can join in.

    Today's recipe sounds soooo good.
