Texas Caviar-Black Eyed Peas for New Years!

Hi everyone! I'm making Texas Caviar for my Personal PIGskin Challenge this week.
This is a fun way to incorporate black eyed peas into your New Years traditions.
Black eyed peas are traditionally eaten on New Year's Day for luck and prosperity.

This is a simple version, using canned peas instead of dry. 
Hope you love it if you try it!
Texas Caviar
1 can black eyed peas, rinsed
1 can Rotel or store brand, drained (I didn't do that-duh!)
1/4 C diced onion
1/4 C diced green pepper
1/2 C Italian dressing
1 clove garlic, minced
1/8 tsp cumin
Mix all, let stand for an hour or two.
Serve with tortilla chips.

  9. Thanks again! As you can see I am enjoying the stained glass very much and surely did'nt want to put it away too quickly. It's so pretty and does look great there on the stand where the light from the kitchen door can reflect off of it in the daytime.
    I've never heard of this Texas Caviar dish, but it certainly is a new twist on eating those black eyed peas. I always have to have my Hoppin John on new years day though! Always! This would be great for a new year eve party dish! Thanks!

  10. This has always been a favorite for us on New Years Day. Sometimes, tho, we have a big pot of Black Eyes with onion and cornbread. Yummm
    Neither is a bad way to start the new year.:))

  12. Now that's what I call a Fancy Dish...and I do mean the DISH and the Caviar! It's a first for me....yep...seeing Texas Caviar served on Fenton Silver Crest! Pretty Fancy for Blackeyed Peas...but hey it's New Years! I don't usually like Blackeyed Peas, but I think I could handle some in the Texas Caviar! I do have the same Fenton Serving Pieces...I think I'll try the Caviar!

  15. We always fix black eyed pea soup for the New Year and eat it with cornbread. I'm guessing this was pretty spicy if you didn't drain the Rotels.

    that sounds yummy and easy. We eat on New Year's Day for luck and prosperity SAUERKRAUT. But maybe it helps more to eat the beans, too. LOL

  20. Lynn, do you know I've never even TASTED a black-eye pea?? I know, I know...its not a northern sort of thing. I may have to try this recipe except the Rotels are too hot for this wimp. I'll find a substitute.

  22. I was just looking at black-eyed peas in the store yesterday, contemplating buying them because I know they bring good luck! But I didn't know what to do with them, so I didn't buy them. Now I know exactly what to do, and this sounds so yummy. I'm heading back to the store!

  26. What a great idea! I've never fixed that type of Texas Cavair with black eyed peas, but I will now!! I've used a recipe off the back of Bush's black beans...which also uses Italian dressing as an ingredient. It's always a big hit when I take it places. I've also drastically reduced the sodium content by using "no salt" beans and corn. The dressing has plenty of sodium to give it a little taste.
