Ham & Egg Dip!

Hi Everyone-Happy New Year to You All! Well here it is, my last dip post for my Personal PIGskin Challenge-whew! It was interesting for me try new things and I hope you found something fun for the holidays! I'm joining Foodie Friday.
I just winged this one, it was fun experimenting...
Santa brought me a new Kitchen Aid Food Processor so I wanted to try it out, and I had plenty of  left over ham... The FP works great, very impressive and you can add anything to this dip that you like in either
an egg salad or ham salad sandwich.

Ham & Egg Dip
Approx 1/2 lb ham, left over or deli ham (less, you can always add more)
2 hard boiled eggs
Approx 10-12 small Gherkin sweet pickles
3-4 tsp mustard (I used spicy)
Heaping 1/4 cup mayo (enough to make it a paste type consistency)
  • Add ham to bowl of food processor and give it a whirl!
  • Then add the rest and do the same.
  • Serve with crackers, pretzels, bread, celery, etc.
  • They liked it at the office, we did decide adding a little onion would have been good too! I'd add it with the ham in the beginning.
I'm posting this early in case anyone has ham to use up and is looking for one more New Year's Eve munchie idea. (Also because I don't have a tablescape to share this week!)

PS-as for my hoping to not weigh 1,000 pounds by the end of the challenge... let's say I'm happy to have come in just under that:@)

  4. Happy New Year. Our boys must have shopped together. I got a Kitchenaid Stand Mixer. I can't wait to use it.

    This sounds yummy. You could add green food coloring and make Green Eggs and Ham for St. Patty's Day...or not.

  5. Lynn, I know this is good as I made much the same recipe with my left over ham in my processer. You will love your new processor. I try to think of new things to make with mine all the time.

  7. Yummy! I would put this on a nice soft roll and eat it as a sandwich. I have been looking for a good ham salad... er... dip! Wonderful,Lynn!

  8. Looks yummy, and what a great way to use leftovers! I wanted to tell you how much I've enjoyed the pigskin challenge. I told family members about it, especially those who go to a lot of parties where they have to bring a munchie. This has been great!
