Small Batch Canning-Nectarine Jam

Hey everyone! I've mentioned before that I'm a big fan of small batch canning, it's a great way to use up a few leftover goodies before they go bad. I can make two half pint jars and get cleaned up in about an hour and depending on how much jam your family eats, you might be able to just store it in the fridge and save the processing time!
I had three nectarines to use up so...
And since this was just for me, I didn't bother peeling them.

Nectarine/Peach Jam
1 1/3 C chopped fruit (approx 3 nectarines or peaches)
1/3 C water
1 Tblsp lemon juice
1 Tblsp low sugar/no sugar pectin*
1/2 C (or less) sugar
  1. Add first four ingredients to sauce pan and bring to a rolling boil.
  2. Add sugar, return to rolling boil for one minute.
  3. Remove from heat, put into serialized jars, add lids and process in a water bath for 10 minutes.
Notes:
  • This will make one pint of jam.
  • You can easily store this in the fridge and save the processing time.
  • *The Ball recipe called for 1 1/2 Tblsp pectin, I just thought that was too much so I cut back. Mine set up fine.
  • Ball has jars of pectin out this year so you can make 2-22 jars of jam. I've seen both at Walmart and supermarkets.
  • I prefer low/no sugar pectin and then just adding some sugar to it.

  6. Lynn -- how clever of you to can in small batches -- using up all your bits and pieces -- this is exactly what I need these days -- not the tons and tons I used to can when all the kids were at home ;)

    I so agree! I do it sometimes when I have a big bowl of tomatoes, and only want to do 5 or 6 pints, because they are so quick to do. Plus there are only 2 of us here at home.
    I do love canning.
    So far, just tomatoes and some berry preserves this year.

    When I think of canning I always remember my Mom and my Aunts making an entire day out of canning vegetables and fruits.
    As I kid, I loved watching them.

  21. You make it so simple! I always associate canning and making jam with flats of fruit or veggies that never end! I like making just a bit!!

  25. Hi Joanne! I don't see a way to e-mail you so I'll answer here. I use dry pectin, each box holds 3 Tblsp. This year Ball put out jars of pectin too so that you can make 2-22 jars at a time. I've seen them at Walmart and supermarkets. Have fun:@)

  26. I never knew you could do such small batches when canning. I have never done any canning but I might surprise my hubby and try this since I can do it in small quantities.
