And yep, these are the first two zucchini I hand pollinated here.
Quick Note: I love my grill pans but don't always love having to wash them...
For the first time I picked up some of the disposable 2-packs of grill toppers from Dollar Tree this year.
I've been enjoying them:@)
Citrus and Garlic Marinade for Grilled Vegetables-adapted from food.com
2 Tblsp fresh lemon and/or lime juice
2 Tblsp cider vinegar
1 Tblsp diced fresh garlic
1/2 tsp dried thyme
1/2 tsp lemon pepper seasoning
few hearty grinds black pepper
1/3 C olive oil
2-4 zucchini and/or summer squash, cut into chunks
extra 1 tsp lemon pepper seasoning
- Mix all in zip top bag, marinate vegetables on counter for about 3 hours. Turn bag every once in a while.
- Right before tossing vegetables onto the grill, drain liquid from bag. Mix in one more tsp lemon pepper seasoning.
- Grill over medium high heat for 5-8 minutes or until desired doneness. Stir a couple times during cooking.
Eat well and have a happy day:@)
