Corn on the Cob with Lemon Butter and Pressure Cooker Experiment

I've wanted to serve Corn on the Cob with Lemon Butter for a while now. We found it bright and fruity and it was especially nice with lots of freshly cracked black pepper! I was also curious to try cooking the corn in my pressure cooker, I have to say, I really liked it better than cooking it in boiling water. It takes two minutes under pressure, which equaled 15 minutes total using my electronic InstantPot. It all depends on the size of the corn but I'm guessing 6 ears of mid-summer Silver Queen Corn would fit in a 6 quart pot with no trouble. Four ears of big ole hearty yellow corn ~may~ be the max.
But however you choose to cook your corn, don't hesitate to slather it with some lemon butter-it's good stuff folks!

Lemon Butter for Corn on the Cob
Mix zest of one extra large lemon (or two real small ones) with one stick of softened butter. Slather on cooked corn and serve with salt and lots of pepper.

Pressure Cooker Corn on the Cob
Place one cup of water in pressure cooker, add steamer basket and corn. Cook for 2 minutes on high pressure, use automatic release.

  5. I love me some corn on the cob, Lynn, and I've never cooked it in my pressure cooker. The lemon butter sounds like a great way to eat it. I'm wishing I could take a big old bite out of your picture of it.

  6. We eat corn constantly in the summer months Lynn, and the next batch is going to have some lemon butter! I always roast the corn in the oven, you can just throw it in there husks and all and bake it for an hour and there's no pan to clean! Happy weekend,
