Ouch! and a happy ending...

Tell me I'm not alone and we all occasionally have "one of those days". You know the kind, your head says you have this great idea and the finished product is just a disaster.
And what hurts even more than pride is the fact that it involves Ghirardelli chocolate...
Oh yes GF, I did... end up throwing out over a bag of Ghirardelli white chocolate chips-ouch!

Allow me to introduce...
Easter Egg Hunt Fudge
The idea was to give a wink and nod to an egg hunt with green coconut grass and jelly beans as the eggs.
Yea, don't do that...
Does it look like the eggs were run over by a lawn mower to anyone else? 
Not the look I was going for. Not to mention it was so sweet it hurt!
Thought about sticking the coconut to the top and adding a jelly bean, decided it would be too messy.

Now for the happy ending... let's talk about fudge, the edible, adult kind:@) 
Coconut is a great addition to this easy vanilla fudge! 

Coconut Fudge
3 C white chocolate chips-I used Ghirardelli
14 oz can sweetened condensed milk
1/4 C butter
1 tsp vanilla extract
*1 1/2 C coconut 
  1. Line an 8x8 pan with foil on bottom and up the sides so you can lift the fudge out of the pan.
  2. Put chips and milk in a 2 quart sauce pan and heat very slowly over low heat, stirring constantly until the chips melt. If you'd like to melt this in the microwave please see the Maple Walnut Fudge post.
  3. Take off heat and add vanilla, stir until incorporated.
  4. *Stir in coconut, work quickly.
  5. Pour into pan, spread evenly and smooth top.
  6. Cool uncovered in fridge until firm, approximately 2 hours.
  7. Cut into small squares, and enjoy.
Note: *I suggest measuring the coconut and giving it a quick whirl in a food processor or chopping it a bit with a knife.

  1. I have never had good luck with regular old fudge for some odd reason. Yet, I would still try this because the ingredients make me want to try it. It sounds yummy.

  2. My husband makes GREAT fudge. He just follows the recipe off the Creme Marshmallow jar for 'Fantasy Fudge', and he uses Ghirardelli chocolate and Raw Sugar. Works like a charm. :-))

  3. That's what they have "test kitchens" for! I'd say you were doing a good job in creating a new candy. But tossing out an entire bag of chocolate? Aaaargh!

  5. Funny. Yep, I had a fail, of sorts, yesterday. I made a root beer float cake that ended up not tasting like root beer, but wasn't bad. My fudge frosting was more like a glaze and I found out why...forgot to add the cocoa powder, still tasted good, just not the effect I was going for. ; (

  6. I made fudge once and it was on the can of evaporated milk or sweetened condensed milk, don't remember. I do not think this looks bad. xo

  10. No Lynn, you are not alone!
    Unfortunately I have been having TOO MANY of those days Lately! As a matter of fact "I THINK TODAY is ONE OF THOSE DAYS"! I put all my supper in my SLOW COOKER at 2PM and I'm expecting SUPPER TO BE AT 5ish! HAHAHA!!! We are having split pea and ham hock soup....Well, do you think we'll make it??? Thank you SO MUCH for letting me know "I'm not alone"!!!

  11. Lynn I would have eaten that "run over by a lawmower" fudge anyway...lol! I like white chocolate, but no one else in my family does so I usually don't buy it.

  12. OH I CRACKED UP when I read your words blazoned across the photo. EPIC FAIL! So truthful and funny. Honestly, my epic fail was a red velvet cake I baked for a movie star's party. It was HORRIBLE. So I cut it up into small pieces and decorated each piece with an edible flower. Everyone loved it, but it was so overbeaten, holey, terrible. Embarrassing.

  13. I think I'd rather forego the jelly beans if I were to eat the fudge labeled as Epic Fail, but it sure is pretty!
    Mister loves coconut. Bet he'd like that recipe!

  16. Too funny Lynn because my friend saw them make this on a local TV show and she was telling me about it and she wanted me to try it! Glad you tried it out first - ha ha! I had one of those days last week. I tried making the cupcake with the Cadbury egg in the bottom and you could have gagged me with how sweet it was and it didn't look cute like theirs did when I cut it open. Fortunately I only made 4 and the rest I did plain. They 4 got tossed!

  18. I make the creme marshmallow fudge and use a candy thermometer. It is easy and tastes lovely. I mess up in the kitchen all the time Lynn. You hang in there.
