Peach Cobbler for One

Hey everyone! Every once in a while you just have to treat yourself to something special! I had a beautifully ripe peach so I thought I'd make a cobbler. It can be made in any single serving baking dish, this pie dish is 4 1/2", you could also use a ramekin.

I wanted you to see the cakey part...

Peach Cobbler for One
2-3 tsp butter (I used 3 tsp in the pic, I'll cut back next time)
2 Tblsp brown sugar, divided
3 Tblsp A/P flour
3 Tblsp milk
1/4 tsp baking powder
1/8 tsp salt
Nutmeg to taste
1 peach chopped

Directions:
  1. Preheat oven to 400 degrees.
  2. Melt butter in bottom of baking dish in the microwave.
  3. Mix 1 Tblsp brown sugar, the flour, milk, baking powder salt and nutmeg if using.
  4. Pour batter over butter.
  5. Chop peach and microwave for 20 seconds.
  6. Place peach on top of batter.
  7. Sprinkle with remaining 1 Tblsp brown sugar.
  8. Bake approx 25 minutes.
Notes:
  • I didn't bother peeling the peach.
  • I happened to have Half and Half so that's what I used.
  • Put a tray under it in case the cobbler bubbles over a bit.
  • I have a small counter top oven, mine was done in about 22 minutes.

  3. I love a recipe for one!! sometimes we like to indulge all on our own. This looks fantastic. Do you think I could use the equalivent of frozen peached, thawed, chopped and patted dry?

  16. I would eat this for breakfast... peaches! What a great recipe for me. During the week it is just Bobby and me so I don't like to keep sweets around. Perfect for us! And because it is not too sweet I will love it!
