Grilled Chicken with an Orange BBQ Sauce

This Grilled Chicken with an Orange BBQ Sauce is a wink and nod to a Chinese food flavor profile. I heated up a disposable grill pan, tossed the chicken with a little olive oil, salt and pepper, added it to the grill and then about 5 minutes before it was done cooking, brushed everything well with the sweet sauce. This is a nice meal served over rice with a side of steamed broccoli. When I first started typing this up, I wrote that the green onions were optional... Once I sat down to eat, the best bites had the green onion! Use your favorite BBQ sauce, I think you'll like this one if you try it folks:@)

Look at that great color, 
no cornstarch or flour, just the heat from the grill.
That large piece in the upper right is doused in Italian Dressing 
and cooking for lunch salads during the week.
Once the grill is fired up I try to cook for a couple meals if I can.

Grilled Chicken with Orange BBQ Sauce
For approximately each 1 lb of boneless chicken breast cut into 1" cubes:
1/3 C BBQ sauce-your favorite brand
1/3 C orange marmalade
1/2 tsp soy sauce
1/8 tsp garlic powder
1/8 tsp onion powder
  1. Heat grill and grill pan on high.
  2. Lightly drizzle chicken with olive oil, add S&P as desired, mix well.
  3. Toss chicken into grill pan, reduce to medium heat. Let sit for 5 minutes, stir.
  4. When you get to about 5 minutes left in cooking time, turn the heat down to low and begin to brush the sauce over all of the chicken. Coat all sides and do flip it often so the sugar doesn't burn.
  5. Garnish with sliced scallions.
  6. Serve over rice.
