Raspberry Jello Spritz-Christmas Poinsettia Blossoms

If you've spent any time looking at Christmas cookies on the net you've probably seen Raspberry Poinsettia Blossoms (here). The idea is you shape the dough into a ball, chill it and then cut the dough which opens and bakes into a flower. They are truly a pretty cookie, but I hear a little finicky... Well, I have a cookie press and I'm not afraid to use it:@) This dough is good for the press and they whipped up in no time. Don't hesitate to give this a try if you're looking for a tasty little cookie that will add some bright color to your cookie tray!

Raspberry Poinsettia Blossoms-from Betty Crocker
3/4 C butter, softened
1/2 C sugar
1 tsp vanilla
1 egg
1 box, 4 serving size Raspberry Jello-regular, not sugar free
2 C A/P flour
yellow sprinkles for the centers
  1. Beat butter, sugar, vanilla, egg and Jello with mixer until combined.
  2. Add flour, mix until just combined-if it looks dry and crumbly use your hands, it will come together.
  3. Fill cookie press, form cookies on cool, ungreased cookie sheets. Add yellow sprinkles to centers.
  4. Chill for 15-20 minutes in fridge-I did not do this.
  5. Bake at 400 degrees for 6-8 minutes.
  6. Cool on sheet for a minute then move cookies to cooling rack.
  7. Store in air tight container.

  3. Very pretty, Lynn! I wonder how lime JellO would work with a tree shape in the cookie press? I may try it!
    The same multi colored sprinkles you have on your Christmas Tree Deviled Eggs would look festive, too
