Citrus Marinated Olives

I love olives, always have! But to date I've never done anything... fancy with them. Thanks to these Citrus Marinated Olives I can't say that any more:@) The fresh extra virgin olive oil along with orange and lemon zest really make these olives burst with flavor! I made a half batch and only used large green olives, I'm sure the kalamata olives would be amazing.

These olives will add a little salty-citrusy bite to your party menu folks!

Citrus Marinated Olives-from Diabetic Cooking
This recipe is easily cut in half and use whatever olives you'd like, they do show pitted ones though.
1 C (or 8 oz) large green olives, drained
1 C kalamata olives, rinsed and drained-I made a half recipe and only used green olives this time
1/3 C extra virgin olive oil
1/4 C orange juice
3 Tblsp sherry vinegar or red wine vinegar-I used red wine
2 Tblsp lemon juice
1 Tblsp grated orange peel-They pulled off long strips instead of using a zester-pretty!
1 Tblsp grated lemon peel-Same as with the orange peel...
1/2 tsp ground cumin
1/4 tsp red pepper flakes
  • Combine everything in glass bowl. Let stand over night at room temperature, then refrigerate for up to two weeks. 
Eat well and have a happy day:@)

  8. I think you must have a MUCH nicer Walmart that I do, Lynn! I've been there several times, leading up to this holiday & never saw those cute toothpicks. Never did find those Halloween pop-up toys either. :-(
    The olives look yummy-good! I bought some big ones this morning without the pimento & intend to stuff them with blue cheese closer to Turkey day. I'll have to try your recipe for Christmas. Thanks!

  10. Lynn...these will be great for my relish tray. Maybe it will encourage more people to eat them, Olives and pickles, etc., were such a big part of our holiday dinner when we were younger and now, not so much. Too bad.
