Soft, fluffy, fragrant and yummy! My sons loved these rolls-very high praise indeed:@)
Quick Yeast Rolls2 Tblsp shortening
3 Tblsp sugar
1 C hot water (I used hot tap water)
1 (.25oz) envelope yeast or 2 1/4 tsp yeast
1 egg, beaten
1 tsp salt
2 1/4 C A/P flour
- Preheat oven to 425 degrees and grease 8 muffin cups.
- In large bowl mix shortening, sugar and water.
- Cool to lukewarm and add yeast.
- Add the rest, mix well.
- Let rise in bowl until double in size (approx 25 minutes).
- Divide into muffin tin and allow to rise until double in size again.
- Bake 10 minutes or until a knife inserted in center comes out clean.
- I subbed one cup of King Arthur Whole Wheat Flour.
- All of the shortening did not melt completely, no problem.
- I used my Kitchen Aid with the regular paddle.
- This is a wet, sticky dough. I added it to the muffin pan with a spoon, pushing it off the spoon with my finger.
- My boys have asked me to make these again!
How did you know that I was Googling quick breads yesterday? Those look so good. Are you supposed to melt the shortening before addingto the rest of the ingrediants?

Simple and easy....I have to try these. I wasn't aware that yeast came in a jar, but I am not one to make bread very often...actually, it's been years!! lol!

ReplyDeleteLynn, it's a good thing I don't live in your household because I would weigh a ton eating that wonderful bread you make. I wouldn't be able to resist it! You are a very good baker, especially breads and rolls. Is there some trickery going on or did the witches really return Earl as Kathleen said? I hope it is true, for Earl's sake!!---Shannon

ReplyDeleteI buy the bag of yeast from Costco or BJ's. Cheaper and lasts a long time in the frig.

ReplyDeleteDo you have any suggestions on mixing dough if you don't have a large mixer? I have an electric mixer that doesn't work too well after two minutes of mixing (sigh) and I don't know what else to use.
I could eat the batch by myself! I am such a bread fiend. These look incredible and have such a nice texture. Wish I had some coming out of the oven now.
