What's the surprise... an olive in the center of each meatball!
Now, as we're getting close to Halloween,
I know there are lots of folks that like to tease the kids... do these remind you of anything?
I'm just sayin'...
Mexican Surprise Party Meatballs from Campbell's Kitchen
2 slices white bread, torn into bits1/2 C milk
2lb ground beef
2 eggs
1/4 C onion, finely diced
3 cloves garlic, minced
1/4 C parsley, finely chopped
1/2 tsp black pepper
50 small pimento stuffed Spanish olives
2 jars (16 oz each) Pace Picante Sauce
- Place bread and milk in bowl, let bread absorb milk. Add beef, eggs, onion, garlic, parsley and pepper.
- Mix and form into 50 1" meatballs. Place an olive in the center of each meatball. Put meatballs into 3 quart shallow baking dish.
- Bake 350 degrees for 25 minutes or until cooked.
- Put meatballs in 6 quart stock pot, add Picante Sauce and heat through.
- I grated the garlic, didn't want biting into a chunk of that to be my "surprise".
- This is a wet mix, I only added a splash of milk and they flattened out on the bottom. I wouldn't add all of the milk.
- Even though the recipe does not call for salt, I think it needs some.
- Using 1 Tblsp of meat, roll into a rough ball, indent it with your thumb, add the olive, then gently bring the meat closed around it. Then carefully roll it between your hands to make it round. Once you make one or two it goes fast. You could have this whole batch rolled in about 30 minutes or less.
- I used a salsa I had on hand.
- This is an easy recipe to cut in half or even quarter. 1/4 batch made 13 meatballs.
- I like these and think they're different, the reviews are very good. I'd like to try them one more time adding a little salt to see if they're something I'd say might become a signature dish for parties.
I don't know? Who does it remind you of? LOL I love meatballs, hold the olives!
ReplyDeleteMeatballs are good with ground pork too!

I also see a pepper nose and sideways grin below the eyes. Just saying...
ReplyDeleteAnother great recipe - I can see a note card in front of them eyeballs with the eye cross out and the word meat written above them. The kids will love it.
ReplyDeleteI love meatballs and these really do LOOK delish! The eyes resemble mine after hours on the computer!! Hehe
ReplyDeleteHave a great week, Lynn
That is what I thought as soon as I saw them. Eyeballs! Plus my kids all love green olives even my 3 yr old. How fun!
ReplyDeleteYou are too funny! And every time I think there is nothing new you could possibly do with a meatball... You're great!
ReplyDeleteBlessing's Debbie
Meatballs and green olives...heaven!
ReplyDeleteOh Yum!!!! Love the olive surprise in the center!
ReplyDeleteHi Lynn,
ReplyDeleteI am very concerned about Earl. My little Jaque' began barking awhile ago and I ran out to see if it might be Earl, but it wasn't. Has Earl come home yet?
Miz Helen
Too funny...but looks like it would test great
ReplyDeleteLoving the meatballs. They kind look like a face? Hubby loves hot sauce so he'll add to it. Thanks for the recipe sweet piggy. The pic is the original, my grands made a mess, but we used a rolling pin to brake the cookies and they came out just like it and with the jelly snakes, awesome, they still remember the fun! Have a super week. FABBY
ReplyDeleteLove the meateyeballs! But I am wildly in love with that cake. Still thinking I need to do that for my godchildren. Now, Mr. Magpie has me going off next week. Sigh. So not sure when I am going to bake it.
ReplyDeleteXO,
Sheila
That's a fun meal for trick-or-treat night!! Kids love creepy-looking food!
ReplyDeleteLots of fun cooking with your recipes. I was planning a meatloaf for dinner....now I think I'll just make it look like eyeballs. Thanks for the idea! I think I'll add a little spaghetti for a scary hairy look.!!!
ReplyDeleteYum ~ these look so good Lynn!
ReplyDeleteI haven't met an olive I haven't loved, so you just KNOW I would love these. :D

I made those goofy ice cube eyeballs with olives once. I think I'd really like the olive inside of the meatball. Sounds like a very tasty recipe. Funny to have the olive be the stuffing instead of the olive being stuffed ;)
ReplyDeleteI love the effect when they are cut in half. You had me drooling before then as I am hungry and am visiting rather than cooking! Perfect for scaring the little ones. My little ones want to go looking for "the spooke".
ReplyDeleteLOL! I think they are perfect for Halloween!
ReplyDeleteI love the idea of that olive in the middle - YUM! Good treat.
ReplyDeletesandie
