Paula's Lemon Coconut Macaroons

Hey Y'All! Just to whet our appetites for the Paula Deen Celebrity Cook-Along I whipped up a batch of her Lemon Coconut Macaroons for Easter, and let me just say Oh Momma!
Hope you love it if you try it!
Lemon Coconut Macaroons
1 large egg white
1/8 teaspoon salt
3/4 cup sweetened condensed milk
1 tablespoon lemon zest
1/2 teaspoon lemon extract
1/2 teaspoon vanilla extract
1 (14-ounce) bag shredded sweetened coconut, finely chopped

Directions

Preheat the oven to 300 degree F. Line 2 baking sheets with parchment paper.
In a medium bowl, whisk the egg white and salt until frothy, about 2 minutes. Stir in the condensed milk, zest, and extracts. Using a rubber spatula, fold in the coconut until well combined. Using a small spring-loaded scoop and your hands, shape the mixture into 1 1/2-inch mounds. Place the macaroons about 1 inch apart on the prepared baking sheets. Bake until lightly brown, about 20 minutes. Transfer the pans to wire racks and let cool completely.
Notes:
  1. Using my 1 1/4" cookie scoop, I ended up with 25 cookies. Paula says you should get 12 cookies...
  2.  Should these be flattened out a little? I'm not sure, there isn't a picture with the recipe.
  3. I did not chop the coconut, I think a quick whirl in the food processor would be a very good thing.
  4. I just used the peel of one whole lemon, I grated it right into the bowl and did not measure.
  5. This was the first time I've ever used sweetened condensed milk, where has THAT been all  my life?!?!
  6. I would make these again!

  5. Such a simple recipe. Condensed milk? Just means the calories are condensed down into a tiny package that explode back to regular size when you ingest them. 130 per 2 teaspoons.
    Way to ruin a good food buzz. Sorry.
    I will make these anyways.

  7. Oh my! These do look good! I just love all her dessert recipes. Have yet to find one not good. I need to pick out another one of her recipes for this week. I really like this cook off. I can really get into her cooking. I like how she makes everything down home good!

  9. I am a huge fan of macaroons. Still would love to get the recipe from my grocery store. They are huge and thick and lately have begun to tempt me with chocolate dipped ones too. Yours look lovely too. Joni

    These sound delicious. I've made coconut macaroons but never with lemon.

  19. Oh my word you need a scratch and sniff on here! lol My dad would love these and it sounds so easy even I could cook them! Girl here in my neck of the woods condensed milk is our friend!!!! Makes the best sweet potatoe casseroles and pies! Thanks for the recipe girl and thanks for coming by..oh and about Uncle Norman..he was a hoot for sure...would give you the shirt off his back..literally..catch him on a Saturday afternoon and he'd be standing in the yard barefoot wearing nothing but his pants and singing to anybody that would listen! lol lol Have a great week girl...Picket

  23. These sound great. I tried a Paula recipe for Easter too..the cake in my mosaic. It tasted pretty good but I have to say either my oven is off or her times were! lol I am going to try and remember to participate in your fun even this time around. I have always wanted to try her ooey gooey cake. Great excuse!

    I can not BELIEVE you've never used Eagle Brand Milk before. We love that stuff. :)
    My son used to keep an open can of it in the fridge WITH A SPOON STUCK IN IT, and ever so often, he would get a big spoonful, eat it and stick that spoon back in the condensed milk. Needless to say, no one else in the family would touch HIS can. :))
