No-Bake Peanut Butter Rice Krispy Kiss Cookies

These Peanut Butter, Rice Krispy and Hershey Kiss Cookies are a nice no-bake addition to the cookie tray! I have to say, when it comes to cookies, these come together pretty quickly! From start to dishes washed in less than an hour. I used a non-stick skillet, boiled the sugars then mixed everything right in the skillet. A cookie scoop helped keep the size fairly uniform and since these are basically a thumbprint cookie variation, you can start the hole in the middle with your thumb, then add the Kiss and form the cookie around it. While they might not be the most colorful cookie, it's hard to beat a chocolate and peanut butter combination:@) 

If you'd like them to look a tad more festive, 
try sprinkling the top with red or green sugar before adding the Kiss.

No-Bake Peanut Butter Rice Krispy Kiss Cookies-from The Cookie Elf
1/4 C packed brown sugar
1/2 C corn syrup, either light or dark
1 C creamy peanut butter
1 tsp vanilla
3 C Rice Krispy Cereal
24-30 Hershey Kisses, unwrapped
  1. Line baking tray with parchment, wax paper, or silicone liner.
  2. Measure cereal, set aside. Have peanut butter, vanilla and Kisses all close at hand.
  3. Add brown sugar and corn syrup to medium sauce pan (I made a half batch and used a 10" non-stick skillet). Stir constantly and bring to a boil. Remove from heat.
  4. Immediately stir in peanut butter and vanilla. Stir until incorporated.
  5. Stir in cereal until completely coated, try to work quickly.
  6. Measure out 1 1/2" balls of mixture, place on parchment/wax paper/silicone. 
  7. Press Kiss into the center of each one, form cookie around Kiss.
  8. Let sit until completely cooled.
  9. Store in air tight container with wax paper between layers.
