I had a handful of beans from my planters and decided to try this Slow Cooker Potatoes and Green Beans side dish. Most of the recipes I saw call for adding liquid, I didn't want to do that. I find Crock Pots cook moist and even added a towel under the lid to collect excess condensation. If you'd really like to simplify things, you could always add some cubed cooked ham during the last hour and make a complete meal. It doesn't get much easier than that:@)
Slow Cooker Potatoes and Green Beans (Ham Optional)
2 large red potatoes, washed, cut into 1/2" pieces-approximately 1/2 lb
Good handful fresh green beans, washed, stem end trimmed, cut in half
1 chicken bullion cube
1/2 tsp onion powder
- Crush bullion cube with spoon in slow cooker vessel. I used a 2 quart Crock Pot.
- Add potatoes to bottom of vessel, sprinkle with onion powder, give a stir.
- Add green beans on top of potatoes.
- Place two paper towels or clean dish towel under lid of Crock Pot, turn to high.
- Cook for 2 hours total, stirring at the 1 hour point and replacing paper towels if wet. Add cubed cooked ham at the 1 hour point if desired.

I bought a 2.5 qt. crockpot you mentioned the other day. I'm using it today for the first time. Just two of us here so I'm SO glad you talked about it - I think it'll be perfect for us. I also make green beans and potatoes, but haven't done it in crockpot. I'll be trying that. Thanks for continuing to post!
ReplyDeleteThis is such a comforting meal to me, Lynn. I used to make this waaaaay back in the day. Lately I’ve made it with smoked sausage added to the beans and potatoes.
ReplyDeleteI went straight upstairs and put on a pot of beans and potatoes the regular way, with garlic and onion and sesame oil and some tee-ninecy potatoes, just because yours looked so tasty. We're going to have little bowls of them like soup with sandwiches from the three leftover spreads made for weekend houseguests--a choice of egg salad, tuna salad or chicken salad with apple and grapes. Dinner on trays, Jane Tennison on TV.
