Easy Fettuccine with Butternut Squash -Instant Pot Pressure Cooker or Stove Top

I had a small squash that needed to be used up and decided this Fettuccine with Butternut Squash would make a nice lunch. And it was:@) I kept things extremely simple, just mashed the squash with a little butter and seasoned salt and used it to coat a nice substantial al dente pasta. This was an easy meal and both items were cooked in the Instant Pot Pressure Cooker, but could also be made on the stove.

Fettuccine with Butternut Squash
Method for one hearty meal:
Approximately 1 1/2-2 C cubed butternut squash-I aimed for 1/2" dice
garlic powder
seasoned salt-your favorite brand
butter, however much you'd like
small handful of fettuccine broken in half, enough for one meal
  1. Add squash to steamer basket, place basket in pressure cooker vessel.
  2. Add 1 C water, sprinkle garlic powder and seasoned salt over all of the squash.
  3. Set pressure cooker to 5 minutes, use automatic release. 
  4. Pour squash into bowl with butter, cover bowl.
  5. Add one more cup of water to the vessel that you already cooked the squash in (don't pour out original water).
  6. Add pasta directly to water, push pasta under water. 
  7. Set pressure cooker to 5 minutes, use automatic release and immediately drain pasta.
  8. While pasta is cooking, mash the squash with potato masher or fork, adding more seasoned salt if needed.
  9. Stir squash into the pasta and serve immediately.

  3. What a great meal to cook in the IP! I have done pasta and it’s so great because it doesn’t need drained. A one pot meal is always a winner.
