I'm always looking for new recipes to try, and to share on the blog, and
Weight Watchers Zero Point Deviled Eggs caught my eye. These eggs are very good and a bit tangier than those made with mayonnaise.
I didn't have scallions when I made them, but did have some fresh parsley (I'm experimenting with trying to keep it alive in the planter through the Philadelphia winter-we'll see). I also added a dusting of paprika. So, even if we're still indulging during the holidays... It might not be a bad idea to just tuck this recipe away for January 1st:@)
My only other suggestion is, if you like mustard in your deviled eggs,
you might want to sub a zero point one for the hot sauce.
Weight Watchers Zero Point Deviled Eggs-

6 eggs, hard boiled, peeled and cut in half
1/3 non-fat Greek yogurt
1/4 tsp Sriracha Sauce-or any zero point hot sauce
2 scallions, chopped-
I subbed some fresh parsley
S&P to taste
2 Tblsp fat free shredded cheddar cheese
- Mash yolks with yogurt, hot sauce, scallions and salt and pepper.
- Fill whites with yolk mixture.
- Top with shredded cheese and more scallions if desired.

The bit of heat and cheese make these darn tasty! Plus the zero points doesn't hurt. Neither of our teams had their best year, but at least it was a win for us. Sorry to hear about the Eagles :(

ReplyDeleteSubbing mayo for the Greek yogurt is a great idea! You'll have to keep us posted on keeping the parsley alive.
