Grilled Garlic Mushroom Kabobs

I love all things kabob and these Grilled Garlic Mushroom Kabobs were added to the menu as soon as I saw them. A little tangy and a little herby, they'd be a perfect side dish for that steak BBQ you'll be having this Sunday! And if you do happen to have some fresh parsley the added color would be very nice. If you like mushrooms folks, I think you'll like them even more cooked on a stick over fire:@)
I was out of balsamic vinegar so I used red wine vinegar and a pinch of sugar, not a bad substitute.

Grilled Garlic Mushroom Kabobs-from Damn Delicious
1/4 C balsamic vinegar-sub a low carb vinegar if desired
2 Tblsp olive oil
3 cloves of garlic, pressed
1/2 tsp dried oregano
1/2 tsp dried basil
S&P to taste
1 lb cremini mushrooms (Baby Bellas), trimmed and cleaned
fresh minced parsley for garnish
  1. Mix everything except mushrooms and parsley.
  2. Add mushrooms and marinate 10-15 minutes.
  3. Skewer mushrooms and grill over medium heat until cooked through, maybe 10-15 minutes turning occasionally.
  4. Stop by the original post for oven directions.
