Maple, Walnut and Cranberry Fudge

A few years ago I posted a very good, yet very easy, Maple Walnut Fudge. This year I decided to change it up a bit and make a Maple, Walnut and Cranberry Fudge. That turned out to be a good idea:@) The creamy fudge coupled with bites of walnut and chewy cranberries was a great combination. I love the idea of a maple treat at Thanksgiving and fudge would be something different to bring to a gathering.
I don't think you'll be disappointed if you try this folks!

Maple, Walnut and Cranberry Fudge
3 C white chocolate chips-I use Ghirardelli, that's a tad less than two 11oz bags
14 oz can sweetened condensed milk
1/4 C butter
1 tsp pure maple extract
3/4 C broken walnut pieces, toasted
3/4 C dried cranberries
  1. Grease an 8x8 baking dish and line with parchment paper, leave edges hanging over the side of dish. I just use Reynolds Rlease Foil.
  2. Melt chips, milk and butter in a microwavable bowl at 30 second intervals. Mix between each melting, do not over heat it or the chocolate will scorch.
  3. When melted, add extract and mix until incorporated, then stir in walnuts and cranberries (work quickly).
  4. Pour into prepared pan and smooth top, chill at least one hour in fridge. Remove from pan, slice and enjoy!
My thoughts:
  • Be careful with the microwaving, mine is super strong so I used a lot less than 30 second intervals.
  • It's always a good idea to toast the walnuts for a few minutes, and don't be afraid to leave some of them bigger.
  • I found pure maple extract at TJ Maxx/Marshalls/HomeGoods.
  • This is a very good fudge, especially for how super easy it is. 
  • Great for Thanksgiving, Christmas, or, um... today...

    Wow, this looks delicious and the cranberries give it a real holiday look, too! I just pinned your original maple and walnut fudge recipe -- Mr. Forest Manor LOVES maple fudge. I'm more of a chocolate or peanut butter fudge kind of girl, myself. :-D I agree with you that this would be something really nice to take to a Thanksgiving dinner; thanks for sharing the recipe, Lynn!!

  8. I think that I have everything to make this wonderful sounding fudge, Lynn. Yes, it would be a sweet little nibble for the end of a Thanksgiving feast. The addition of cranberries adds a pretty pop of color.

  13. One of the craft fairs I will be going to is also a fundraiser and we have to bring a baked good for a silent auction. I always wish I were you - but now I have the next best thing - one of your recipes. I think this would be perfect and the recipe seems to be actually me-proof.
