Crustless Cranberry Pie

Intrigued? So was I:@) This Crustless Cranberry Pie couldn't be easier to make and even if pie baking intimidates you, you can make this one folks. While some might say it has more of a cake consistency, it is chewier and moister than cake. This is an old time type recipe that's mixed with a spatula or spoon and the very thick batter needs to be spread out in the pie plate. As with most cranberry/nut items, I think a little freshly grated orange rind would be a nice addition too.
This pie has a bit of pucker power and is best served with coffee or tea.

Crustless Cranberry Pie-from Ocean Breezes & Country Sneezes
1 C A/P flour
1 C sugar
1/4 tsp salt
2 C cranberries-fresh or frozen
1/2 C walnuts, chopped
1/2 C butter, melted
2 eggs, beaten
1 tsp almond extract
  1. Mix flour, sugar and salt. 
  2. Mix in the cranberries and nuts to coat. 
  3. Stir in everything else.
  4. Spoon (very thick) batter into a greased 9" pie plate and smooth out to fill plate.
  5. Bake at 350 for 40 minutes or until a toothpick comes out clean.
  6. Serve warm with whipped cream or ice cream (optional).

  3. The cranberry pie sounds wonderful, Lynn. I love cranberries and I love the addition of almond extract, and the orange zest would be great, too. This would be perfect with a cup of tea!

  9. It is making me pucker, just imagining it, Lynn!! You do come up with some of the most interesting items. This one reminds me of the fresh sour cherry cobbler my Mom used to make, from the cherries off our own trees. We would spend hours picking the fruit & she would then pit them, BY HAND, & turn them into the most fabulous cherry pie & cherry cobbler. None of us kids seem to be able to duplicate hers. We should have written them down while we had the chance. :(
