Pioneer Woman's Twice Baked Potatoes or any other PW recipe.

These are some hearty potatoes!
I grew up on what G-Mom-B called Potatoes In The Half Shell, they were basically mashed potatoes added back to the shells and baked till brown. I'd pick the whole thing up and eat it, several of them!
PW version-bacon, sour cream, extra butter and cheese-this little piggy could only eat one.
It was VERY good, but only one.
What I did differently:
I used chives from the garden instead of scallions and I did cut back a touch on the butter.
After 15 mins in the oven I turned the broiler on and finished browning the top.

These sound delicious and yes, chives would be less crunchy than scallions. I wasn't in the party this month...any ideas for next month?

ReplyDeleteMy grandson wanted Pineapple Upside Down Cake at Cracker Barrel and I said I would make PWC's so I could enter your linky...lol...I made her potatoes before and they are really decadent.

We are leaving on vacation so I didn't have time to make/blog about them, but when we have some down time I will be back to visit all of the wonderful posts in this fun party!! ReplyDeleteHi Lynn, those potatoes sure look good! I like to do my baked potatoes in the oven instead of the microwave because my favorite part is the skin-and it gets good and crispy in the oven! These look so good with the butter and sour cream, and I think browning them under the broiler is definitely part of being a twice baked potato! I have my own version so I guess it isn't the same as making PW's recipes.

ReplyDeleteHi Lynn, I have the PW cookbook and it is awesome. I have not made theses potatoes yet. I too use chives from my little garden. I love those chives and I didn't know they would grow back after the winter. Mine are thriving. I didn't know about your PW party. Maybe because I was gone for five days. I would have enjoyed joining in.
