Winter Tomato and Cucumber Salad

It's hard to beat summer tomatoes right out of the garden, but they're a little hard to find this time of year... This Winter Tomato and Cucumber Salad makes the best of store bought produce and was a nice side dish that had us reminiscing about last summer's garden:@) The only item called for that's a little different, vodka or gin. While that's not something I usually have on-hand, it only calls for a tablespoon, so I just grabbed a little airplane size bottle. This recipe is intended to be mixed and eaten, it's not for marinating. We thoroughly enjoyed this side dish with Sunday dinner and can't recommend it enough!
I chose to de-seed my tomatoes a bit, and added a little more salt and some pepper before serving.

Winter Tomato and Cucumber Salad-from Food.com
3 Tblsp olive oil
1 Tblsp gin or vodka-I used vodka
1 Tblsp fresh lemon juice
1/4 tsp ground mustard
1/4 tsp salt
1 C sliced tomatoes
1 C peeled and sliced cucumbers
1/3 C sliced onion
  1. Combine liquids in container with tight fitting lid, large enough to hold everything (I used Lock-N-Lock).
  2. Mix/beat until liquid begins to thicken (I added the lid and shook it for a while).
  3. Add veggies, add lid, shake.
  4. Let rest in refrigerator for about 20 minutes, but eat within an hour. (The refrigerator part is from the Food Police... We all know tomatoes are best closer to room temperature. I let it sit covered on my counter for the 20 minutes.)

  2. I love a tomato cucumber onion salad, Lynn, and this one is different with the gin or vodka addition. Getting a mini bottle is something I’d have to do, too.
