Polynesian Meatballs -Appetizer or Dinner -Little Dipper Crock Pot or Cook and Serve

These Polynesian Meatballs caught my eye and I'm glad they did:@) I made them as an appy for the first pre-season game, and highly recommend the recipe. This is a sweet and sour sauce, I could really taste the lemon, and the meatballs are great with a piece of pineapple. Since I wanted to use my Little Dipper Crock Pot, I used 7 oz meatballs and cut the sauce recipe in half, and that fit perfectly. You could also serve it over rice, add a veggie and call it dinner.

My biggest recipe adjustment, I added a little extra cornstarch to make sure the sauce stayed thick in the CP.
I'll list what I did for the Little Dipper below, you can click the link for the full recipe here.
I just had a thought... This would be great with some cubes of ham too:@)

Polynesian Meatballs-adapted from Taste of Home
7 oz frozen meatballs-I used Italian
4 oz snack size cup of pineapple tidbits-reserve juice
1 Tblsp cornstarch + 1 tsp cornstarch
1/4 C cider vinegar
1 Tblsp soy sauce
1 Tblsp lemon juice, freshly squeezed preferred
1/4 C brown sugar
  1. Place meatballs in crock pot.
  2. Pour juice from pineapple into 1/2 C measuring cup. Add enough water to equal 1/2 C.
  3. Add pineapple juice/water, cornstarch, vinegar, soy sauce, lemon juice and brown sugar to small pot. Mix well.
  4. Bring to a boil, stirring constantly, and cook until very thick, pour sauce over meatballs.
  5. Plug in Little Dipper Crock Pot, place folded paper towel under cover and let cook for 1 hour.
  6. Remove lid and gently stir meatballs. Add pineapple and stir again.
  7. Place dry paper towel under lid and cook for 1 hour longer, or until everything is heated through.
  8. Serve with team color food picks and enjoy!

  1. I live sweet and sour meatballs! I made some for a luau luncheon that I went to recently. I think I really need a mini crockpot.
