Zesty Italian Cucumber Salad

I saved this recipe for Zesty Italian Cucumber Salad the minute I saw it! I love every single ingredient and using your favorite Italian salad dressing (Good Seasons for us:@) makes it nice and easy. The only thing that could make this any better... A garden tomato, but we have a way to go before that happens here in Philly. It would be pretty with some of the green left on the cucumber too. Don't hesitate to give this a try folks, it's light and perky, and speaks to warmer weather!
Want something a little more substantial? 
Toss in some cooked macaroni and call it pasta salad (I called it lunch:@)

Zesty Italian Cucumber Salad-from Red & Honey
3 cucumbers spiralized into noodles-I just cut mine into half moons
1 tomato, chopped
1/4 C onion, diced
1/4 C green olives, sliced in half or large chopped
1/4 C pepperoni, sliced or diced-I made match sticks
1/8 C Parmesan cheese-I used the can
1 Tblsp oregano-I cut back a little
1/8 tsp black pepper, or to taste
Italian Salad Dressing, enough to coat everything well
~Mix everything and let mingle in the refrigerator for an hour.

Eat well and have a happy day:@)
