Small Jewish Apple Cake -Loaf Pan Size

One of the things I hope to focus on this year is loaf cakes, I like the idea of scaling back and making snacks that won't tempt me all week. This Small Jewish Apple Cake was a great place to start! Orange juice, apples and cinnamon make a very flavorful cake that's perfect with a cup of coffee or tea.
Instead of using all of the cinnamon/sugar mixture I cut back on the sugar a bit and gave the top of the apples an extra sprinkling of cinnamon.
One day I'd like to try subbing apple sauce for the oil and see how that turns out.

As for the storm, it was a doozie! Very windy and it didn't stop snowing all day, this pic was around 10AM Saturday.
I woke up this morning to a little fort Mother Nature made...
This is a 3' wall of snow that the wind created around the front of my house!
Now for the clean-up... Glad I have some cake to give me strength:@)

Small Jewish Apple Loaf Cake
3 Tblsp sugar-can easily cut back on the sugar
1 tsp cinnamon
1 C A/P flour
1/2 C sugar
1 tsp baking powder
1/4 tsp salt
1/4 C orange juice
1/4 C vegetable oil
1 egg
1 large apple, peeled, cored and diced
  1. Mix 3 Tblsp sugar and cinnamon in small bowl and set aside.
  2. Add dry ingredients to bowl, add OJ, oil and egg. Mix well (I used a whisk).
  3. Pour 1/3 batter into a well greased 8x4.5 bread pan (I used Bakers Joy). Add half of the apples, sprinkle with half of the cinnamon/sugar mixture. Add 1/3 batter, top with the rest of the apples and cinnamon/sugar. Top with the remaining batter, it's ok if it doesn't completely cover all the apples.
  4. Bake at 375 for 30-40 minutes or until golden brown and a toothpick comes out clean.
  5. Cool for 5-10 minutes in pan and then turn out onto a rack to cool completely.
Eat well and have a happy day:@)

  1. Lynn, I was thinking about you as I watched the coverage yesterday! You need A LOT of cake to dig your way out of that snow! Your cake does sound delicious. I hope your fridge is fully stocked and your power stays on. Stay warm! ♥

  3. Wow, the snow is beautiful, but daunting, for when you have to venture out for work tomorrow. It's a good thing that you made that apple cake for a nice treat. I'll bet it is perfect with a cup of tea or coffee. I have all the ingredients to whip one up, and I'm like you in loving the small size.

  5. i love anything made with apples...curious as to why this cake is called JEWISH Apple Cake...?

  6. I love the idea of the smaller sweets. My solution is they go to work with Tim or I just eat them. :-). Glad you survived the snow, hope the clean up isn't too bad. Havea good week.

    1. This cake got two thumbs up from my husband!!! I cooked exactly as directed, but added a small handful of chopped pecans to the apples as I layered them in. Maybe 1/4 c. Awesome!!! Thanks again!

    I will be delighted to try this loaf cake, as I love those flavor combos. I substitute apple sauce for oil all the time...no difference except in the fat content. Go for it!!!

  14. Try substituting applesauce or cinnamon applesauce for the vegetable oil, or even coconut oil. Much more flavor packed in there and healthier for you.

  16. Apple cake is wonderful....yours looks so moist! Making a smaller amount is certainly the way to go. Somehow making cake in a loaf pan says it is okay to eat it for breakfast!! :-)

  18. Hi Lynn, I checked in on you a few days ago after the storm but my comments wouldn't stick on any blogs! I'm happy to see that you came through without losing power. Cake is always a good idea and even better during a snowstorm! I know that apples are used during Jewish New Year as part of the celebration and if you google jewish apple cake you will be overwhelmed. My BFF who would know this is away on a long trip but I'm going to find out about this name when she returns! We only got about a foot of snow and the warm day is helping with the melting. Hope it is warming up there too. Linda

  20. I just found out that as an adult you can have cake for breakfast and no one polices it! This is one happy girl! Yours sounds so yummy that I think I am going to have to give it a whirl. Stay warm

  21. Yum, that is one of my favorite cakes!!!! Glad y'all weathered the storm up there. Blame it on my daughters, they had every single spoon from the drawer under their pillows!! lol. Although I enjoyed the snow... the clean up was exhausting!

  23. Wow Lynn, that was some snow!!! We got about five or six inches at our house, but it sure was pretty. I hope your clean-up wasn't too difficult.

    The Jewish Apple Loaf Cake looks delicious, Lynn; I've already pinned the recipe. :-D I love the idea of loaf cakes, too. They seem faster and easier to make; smaller cakes, so hopefully healthier; and not as much waste. Thanks for sharing and I hope you have a great week!

  25. Great recipe. I had first doubled the recipe to make 2 loaves but they were thin. So I tripled the recipe and made 2 more loaves to get a thicker loaves.
