Jalapeno Coleslaw

I made some pulled BBQ pork sandwiches and thought this Jalapeno Coleslaw would be a nice little change of pace, and it was:@) Simply add thinly sliced jalapeno to your favorite coleslaw recipe, or you could even add it to your favorite purchased cole slaw. I did clean the seeds and ribs out of my pepper, it added some extra crunch and flavor.

Coleslaw is one of those things I don't really have a recipe for:
  1. Shred a half head of cabbage, grate a carrot, (slice and add a mack-daddy size jalapeno if desired). 
  2. Give it a couple shakes of celery seed, a little garlic powder, S&P. 
  3. Add approximately equal parts sugar and cider vinegar (maybe 1 Tblsp of each). 
  4. Add enough mayo to get it all mixed together. 
  5. Let it hang out in the fridge for a few hours giving it a stir every so often. Lock and Lock bowls are nice because I can just flip the bowl upside down as I'm passing the fridge
  6. If you're cooking for one or two, cut back and just mix up enough for one meal, I do it all the time.

  1. Your addition of the jalapeno in your slaw sounds great Lynn! We just happen to have some pulled pork in the freezer we were pulling out to enjoy while we watch the Panthers play this afternoon :)

  4. Adding the jalapeño is such a great idea, Lynn! I could even throw in a small can of the sliced ones into my cole slaw and my cabbage/mayo fearing son would eat it up! I am definitely doing this! Linda

  5. I like the idea of adding a little crunchy heat from the jalapeño, Lynn. I'll bet your family enjoyed the BBQ pork with the slaw. I'm hoping the black-eyed peas that I had on New Year's Day will bring some good luck this year.

  7. This is quite brilliant Lynn, and would be a big hit around here! Coleslaw can be cloyingly sweet, the jalapeno is a perfect balancing ingredient~
