Buffalo Pork Kabobs with Grilled Celery, Onion and Jalapeno

The first thing I made on Terra Bella were these Buffalo Pork Kabobs with Grilled Celery, Onion and Jalapeno. You might be thinking "celery on the grill?"... But it's really good folks! I was also very pleasantly surprised by how great jalapenos are on kabobs too, but feel free to sub bell peppers if you'd prefer. This is a nice way to enjoy Buffalo flavoring while saving a few calories... If you opt out of the blue cheese dressing of course:@) I used Tabasco Buffalo Style Hot Sauce and it's very good, has some body to it and sticks well to meat while grilling.
  I tried squares of jalapeno and some 1/2" rounds, I'd stick with the squares.

Just like all grills, there were hot spots on this little pig hibachi, so I'll need to keep a close eye on what I'm cooking. This type of grill can only be used for things that cook quickly over direct heat. And yes, it does get plenty hot!
Want to add something sweet to the skewers? Pineapple would be perfect...
These kabobs would be great with chicken, turkey or shrimp too-why not make it a party and grill some of each!

Buffalo Pork Kabobs with Grilled Celery, Onion and Jalapeno
Brine: 1 C water, 2 Tblsp kosher salt, 1 Tblsp sugar
Boneless pork cut into 1" cubes
Celery, cut into 1" pieces
Jalapenos or your choice of peppers cut into 1" pieces
Onion, cut into 1" pieces
Buffalo Hot Sauce
Olive oil for veggies
S&P
Vegetable oil for the grill grate
Blue cheese dressing for serving-optional
  1. Mix 1 C warm water with 2 Tblsp kosher salt and 1 Tblsp sugar until dissolved, let water cool. 
  2. Brine pork for 15 minutes, remove from liquid and pat dry.
  3. Add pork to a bowl and completely cover with a very liberal amount of hot sauce, let that marinate for at least 15 minutes.
  4. Toss vegetables with olive oil, S&P.
  5. Thread meat and veggies onto skewers and grill over direct heat for about 5 minutes, turn and cook for another 5 minutes or until the meat is cooked through. Brush meat with additional hot sauce while cooking.
  6. Serve with blue cheese dressing if desired.

  7. Because I have been so out of pocket, I had to go back and read the post about Terrabella. I love that!! I see that you haven't painted her yet, but I do hope you do something fun like you mentioned. The kabobs look delicious. I love kabobs because you can mix and match and be creative. I would never have thought to grill celery. I'll give it a whirl.
