G-Mom-B would sprinkle the top with paprika, but I know she'd love the Lawry's Chile and Garlic Salt I used...
I still say that salt is the best thing that's happened to potatoes since eggs!
If you don't have leeks just use finely chopped sweet onions, and you know where I'm going with the bacon label below... I'd saute the onion in bacon fat just to bump up the flavor even more. - Wash and dry russet potatoes, prick a few times with a knife and bake at 400 degrees for one hour. I used my little counter top oven.
- Remove from oven and carefully slice in half lengthwise, scoop out the insides leaving a thin layer in the shell.
- Mash the potatoes with some milk, butter and S&P.
- Plan on one large leek per 4 potatoes (add more or less, it's up to you but I'd lean towards more...) Using only the white and light green part of the leek, slice into 1/4" rings, separate the rings and rinse well. Dry them and saute in some butter for about 5 minutes. You don't want them to get brown, just soft.
- Stir the leeks into the mashed potatoes and fill the shells. Top with paprika or seasoned salt or chipotle powder.
- Add a handful of wood chips to your preheated grill. I put some hickory on tin foil and laid it under the grate of my gas grill.
- Put potatoes on a cast iron skillet, place on grill over indirect heat, cover grill and bake at med/high for about 30 minutes. You'll see lots of smoke... that's a good thing here.
- Serve with grilled steaks and love life!

ReplyDeleteYum! My mom made twice baked potatoes every year for Christmas as special dinners. Everyone loved them but these sound even more wonderful with the smokey flavor.

Well, I don't have leeks but I do have little green onions, so I'm going to try doing these tonight. They look scrumptious, Lynn...of course, EVERYTHING you make looks scrumptious to me (sans the hot peppers!) LOL

I LOVE twice baked potatoes and I used to make them every Christmas Eve. These look especially delicious and of course I know all about the Chile and Garlic seasoning. I just sprinkled some on my fresh cooked green beans for dinner tonight.
