German Apple Cake

I've made this German Apple Cake a few times now, it tastes great and I love that it doesn't make a huge cake, it's maybe only 1" thick. The recipe calls for 3-4 apples and without planning ahead I usually only have 2 large ones so that's what I use. While they may be snuggled up all cozy together before baking... Once the cake puffs up that extra apple would be nice! It's still very tasty though:@)

Note: The original recipe calls for a lot of sugar, you have plenty of room to cut back.

German Apple Cake-adapted from A Spoonful of Sugar
1/2 C butter, softened
1 C sugar-I use 1/2 C
2 eggs
1 C A/P flour
1 tsp baking powder
1 tsp vanilla
1/3 C sugar-I used 1 1/2 Tblsp
1 tsp cinnamon
3-4 large apples, peeled, cored and sliced-I used 2 large apples
  1. Cream the butter and sugar, mix in the eggs.
  2. Mix in the dry and spread the batter into a greased 9" spring form pan (batter will be thick). I only have an 8" pan so that's what I used.
  3. Mix the additional sugar and cinnamon with the apples and arrange them in a circular pattern over the batter. You should have an outer ring and an inner ring. Press the apples into the batter lightly. I just arrange the apples and sprinkle the cinnamon/sugar over them. I usually end up with leftover broken little bits of apple too so I pile them into the center.
  4. Bake at 350 degrees for approximately 50-60 minutes. 
  5. Cool completely and traditionally it's served with a dusting of powdered sugar.

  2. This would be a great cake to bring someone for something like a condolence or house warming, etc. because it could be used either as a dessert cake or a coffee cake. I pinned it. Hope it's foolproof because I'm thinking about taking it to someone this weekend.

  3. Your cake sounds wonderful Lynn and great for breakfast :) It's similar to an Irish apple cake recipe I've used. I love the convenience of a springform pan!

  9. That is such a beautiful cake with the apples placed so gorgeously! You are always having so much fun. Now I can hardly pay attention to my typing as I see the strawberry "carrots" and the cheesecake stuffed strawberries! Yum, yum.
