20 Minute Chipotle Chicken Pozole Soup-New Food To Me

I'm starting a new feature here at Pig In Mud, it's called New Foods To Me. Since I find myself often saying "I've never tried that" I started a list of items and will cross them off with each new (to me) recipe. I'll also add to the list as things come up. My goal will be at least one post a month, more if I'm feeling daring:@)

First up, hominyDid I just hear a gasp from the south??? Yep, never had it, until I made this great 20 Minute Chipotle Chicken Pozole Soup from Bloggy Buddy Kitty. Now, this soup isn't Home Coming Queen beautiful, but there is something about this spicy treat that makes you keep going back for "just one more spoonful"... And everyone dealing with extreme temperatures and snow right now, I guarantee this will warm you up nicely!
Overall I say this soup is great, I love the chipotle broth and plan to try it with beans and lots of lime. As for hominy itself, it's ok. I wasn't wowed and didn't walk away thinking "man I can't wait to have hominy again". But it is one thing I can say I tried and cross off the list:@)

20 Minute Chipotle Chicken Pozole Soup-from Kitty's Kozy Kitchen
Soup:
1/4 cup olive oil-I used a drizzle
2 onions, diced
5 cloves garlic, minced
2 canned chipotle chiles in adobo sauce, finely chopped-I did remove all the seeds I could find
4 (15-oz.) cans hominy, drained and rinsed-I didn't have enough hominy so I added some frozen corn
2 (32-oz) containers low-sodium chicken broth
1 rotisserie chicken, skin and bones discarded, meat shredded
S&P to taste

Toppings:-use any you'd like
Sliced scallions,
Grated cheese
Sliced avocado
Lime wedges
Cilantro leaves, minced
Crushed tortilla chips
Sour cream
  1. Saute onions in olive oil, stirring until softened, about five minutes. 
  2. Add garlic and cook until soft, about 1 minute. 
  3. Add chipotles and cook 30 seconds. 
  4. Stir in hominy and cook, stirring, 5 minutes. 
  5. Add chicken broth, bring to a boil, remove from heat.
  6. Stir in chicken and S&P, cover pot to heat through. Serve with assorted toppings.

  1. Your soup looks warm and comforting and we like the kick of chipotle too. Hominy....not so much and I'm a southerner! You've got the right attitude Lynn. Been there, done that. I feel the same way.

  3. GASP!!!!! There you go. I grew up in the south and hominy was frequently on the table. It was always simply sauteed in butter. This soup sounds mighty tasty. I think I'll put it on my list of things to try.

  5. Hi Lynn, The soup looks good. Have you ever had grits? They are ground hominy, and used to be called hominy grits. I found your list to try quite interesting. Parsnips are good when you put them with carrots, potatoes, onions, and a roast in the crock pot. Almond paste in almond bars is beyond delicious. I found a good recipe for them on the Taste of Home site. I'll come along and vicariously enjoy your new food experiments with you!

  6. I tried hominy at a bbq once and did not like it. However, this looks really good in the photo and list of ingredients. Think I may have to give this another try.

  7. I pinned Kitty's recipe to try too! I admit it that this Georgia girl has never had hominy. I'm going to try it. I'm all about soups right now.
    (And basically,, I'm all over anything that Kitty posts. She is one of my top recipe sources. Believe it or not, you are one of the others.)

  8. Who is this Kitty? I've not heard of her...must figure out where she is ;o)
    I love your list and made my own a couple of years ago. Fish sauce, oyster sauce, and pot stickers are great. Have no fear. I thought I had a great recipe to share with oyster sauce, but I don't see it on my list.   9. Yea, you tried the hominy!! My son wasn't thrilled with it either, but I like the texture. It really doesn't have a lot of taste, though I do like the chipotle kick in the soup.
    I'm impressed with your list. I can't wait to see what you come up with next. xo

  16. I'm a southerner, and I never had hominy until a couple of years ago, and that wasn't on purpose! It looks good in this soup though- just the thing to combat this cold weather we're having. :)

  17. Kitty's soup recipe sounds great Lynn with the chipotle broth! I sort of feel like hominy just like you Lynn, although I love grits. I enjoyed reading your list. You'll love chow chow with your love of pickled foods and veggies and *gasp* you've never tried red velvet anything?, you're in for a treat! You can skip the divinity though :)
