Relish Tray Vegetable Cream Cheese Spread for Bagels

Nothing signals a holiday meal to my sons like seeing a relish tray on the table, we're big fans of it in my family! The thing is, there are many other goodies to eat on a holiday too... So here's a great Relish Tray Vegetable Cream Cheese Spread to make with the leftovers. I'm talking about using everything from carrots to gherkin pickles here folks:@)
Serve this with Bloody Mary's for a post-holiday brunch and it's a mighty fine way to start the day!

Relish Tray Vegetable Cream Cheese Spread
8 oz Cream Cheese, softened
1 Tblsp grated carrot-use the smallest grater you have for the carrots, I used my microplane.
2 Tblsp finely diced celery
1 Tblsp finely diced red and/or green bell pepper-add some jalapeno if you'd like
1 big radish finely diced
1 1/2 Tblsp scallion finely diced- or 1 1/2 tsp grated onion
2 Tblsp finely diced green olives
1 Tblsp finely diced gherkin pickles
1/4 tsp garlic powder
1/4 tsp Worcestershire Sauce
small pinch of dried dill weed
just a couple grates of lemon zest-optional
few grinds of black pepper
small pinch of salt-taste and adjust
~Gently mix everything until well incorporated, chill. Serve with bagels.

Eat well and have a happy day:@)

  3. Why didn't I think of that? We always have a (partially eaten) relish tray and....sometimes I buy vegetable cream cheese.
