On-line recipe suggestions for using it: lime rice, salt crusted potatoes, and on corn on the cob.
Use it as you would regular salt, I'll most likely add it to soups and salsas.
They say it will last for a year covered in the fridge-we'll see:@)
Chop it fine-I used a 3 cup food chopper, and then it's a simple ratio:
4 parts loosely packed cilantro to 1 part Kosher salt
Mix well and store tightly covered in the fridge.
Eat well and have a happy day:@)

Interesting preservation technique. I will be anxious to hear if it does last a year, I think I am skeptical? I might try this with some basil. I am always trying to think of new ways to preserve summer's goodness. Happy Monday!

Your time is great! I always complain that my cilantro doesn't grow well, but this year it's growing like gangbusters and I need to do something with what I'm not using. Can't wait to try this.

ReplyDeleteWhat a creative way to use your cilantro. Sounds good, too. I purchased a new cilantro plant for my herb garden this spring; shortly thereafter I found several little starts of it in my herb garden...apparently it self-seeded.
