Southern Pimento Cheese

I do believe this Yankee actually whimpered out loud when I took the first bite of this Pimento Cheese! As we're officially coming into Snacking Season (you put your bikini away for the summer right?) I highly recommend adding this to your list of things to try. I can't imagine it not being a big hit at any gathering!
See the celery? Yea, that's just for show. I'm kidding:@)... kinda...
Seriously folks, this is great!

Southern Pimento Cheese-from Allrecipes.com
2 C extra sharp cheddar cheese, shredded
8oz cream cheese, softened
1/2 C mayonnaise
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp cayenne powder, optional-I added it
1 jalapeno, seeded and minced, optional-I added it
4oz jar of diced pimento, drained
S&P to taste-I didn't add any additional salt
-Add everything to bowl of mixer and mix well.
-Chill until ready to serve.
-Serve with what ever you would like!!! Doubt you could go wrong with anything! It's going on my bagel this morning...

My tip this week: If there's one thing I hope you take away from visits to Pig In Mud (besides maybe a giggle here and there) it's if you live alone or there are only two of you, I encourage you to still cook for yourself! Don't hesitate to cut recipes in half, or more, pictured is 1/4 of this recipe and I'm loving every bite!

  1. Lynn, you are a Southerner at heart and the reason I know this is that you served your pimento cheese with the two things all Southerners serve with pimento cheese - Ritz crackers and celery sticks. It's perfect!

  2. Yep it's just the two of us MrLoblolly and myself,oh yeah and Buddy out dawg..I cook for us all the time and I have to cut recipes and also make them healty(Mr is type 2)...so bring on the celery!!

  3. I've often heard of this referred to as the "pate" of the south. I grew up on the stuff and LOVE it!

  4. I love this spread for crackers! Adding a little chopped jalapeno is a great idea. I actually do like it on celery sticks too.

  5. Um, no! I gained two pounds over Labor Day week-end, so nope... not going to make this even though my mouth is watering. I may however eat some celery. :P

  8. I make pimento cheese all the time. Generally here in Ga. and S.C. jalepenos are not included in the recipe but Joe would love that inclusion. I add a tsp of sugar to mine.

  11. This reminds me so much of my grandmother. My father's mother always had this on the relish tray, spread on celery. I haven't had it in many years and never did get the recipe. It will be so nice to taste it again...A huge thank you for this trip down memory lane! xo

  15. Yea for pimento cheese and cooking for one or two! It's so funny that you posted this. I just made a Hot Pimento Cheese Dip and I am going to share soon. I made half the recipe for my hubby and I and we ate the whole thing. Hsve fun this football season, Lynn. I'll bet Earl thinks he's the Eagles' mascot.

  17. The spread of land of Dixie~ I would have to ration out a small ramekin of it too, otherwise my hubby and I would eat it in one sitting! This recipe looks delicious with the cream cheese and the addition of the jalapeno! I'm usually too lazy to make it and buy our grocery store brand made with Pepper Jack cheese! I dare you to slather some of that on a burger/slider and add some bacon :)
