Mandarin Orange Salsa

Looking for a different munchie? How about a totally unexpected salsa that uses mandarin oranges, when's the last time you had them? I was a kid, yep, it's been a while:@) I saw this recipe at Cookin' Up North, and changed mine up a bit, strictly in the name of using what I had on hand, but will be making the fresh version when I have garden tomatoes. Anyone with a raised eyebrow about the oranges will quickly change their mind once they taste it! They're not overly sweet, it's more like they balance out the flavors. 
And don't be surprised if folks eat the oranges first...
 I do highly recommend trying this, it's so good I ate it by the spoonful:@)

Mandarin Orange Salsa
5 plum tomatoes, chopped- I drained a 10 oz can of Rotel instead of tomatoes and jalapenos
1 or 2 jalapenos, cleaned and diced-omitted, see above
1/2 large sweet onion, diced-I used 1/3 C
2 Tblsp sugar-1 Tblsp
2 Tblsp cilantro-1 Tblsp, still acquiring a taste for it, so half cilantro, half parsley
2 Tblsp lime juice-Didn't have it but would add 1 Tblsp
1 tsp salt-1/2 tsp
1 tsp garlic, minced-one small clove
1 (15 oz) can mandarin oranges, drained-I only found 11 oz cans, used one
tortilla chips for serving
-Gently mix everything except the chips, chill until ready to serve. Doesn't get much easier folks!

  5. My grandkids love mandarin oranges so I always have some in the fridge. That photo makes me want to stick a spoon in there and scoop up a big bite. This would be so good with spicy chips.

  6. YUM Lynn -- I remember when manderin oranges were on the short list of foods that youngest daughter would eat, lol. She'll be 18 in a couple weeks and thankfully that short list has grown some :)

  10. I am IN! Recently made a tomato/pineapple/black olive mix with catalina/bacon dressing and was amazed at how well tomatoes go with fruit.

  11. I keep cans of these little bitty delicious oranges in my pantry and eat the whole can by themselves. I love them...and am thrilled to get this recipe. Can't wait to try it...

  12. Oh wow, this looks so good. I love fruit salsa and this one looks exceptionally good. I can't remember the last time I bought a can of Mandarin oranges. This one is a keeper for sure.
