Five Cheese Roasted Red Pepper Spread

Every once in a while someone will send me an e-mail saying "I saw this and thought you might like it"... I love those e-mails:@) Bloggy Buddy Gone Country sent me a link to this Five Cheese Roasted Red Pepper Spread and I'm so glad she did!
I'd call this another great Friday Night Munchie, don't hesitate to give it a try folks!
Five Cheese Roasted Red Pepper Spread
1 roasted red pepper, diced, about 1/2 C
8 oz cream cheese, room temp
1 Tblsp grated Parmesan
1 C triple cheddar cheese blend
-Add all to a food processor and let 'er rip.
For spreading/dipping: Bread, crackers, bagel chips, tortilla chips, veggies, etc.

Notes:
  • Recipe is easily cut in half.
  • I don't believe this is supposed to be a super smooth spread folks.
  • A fresh roasted pepper would be wonderful, I used jarred that were dried well on paper towels.
  • Used Neufchatel cheese, worked fine. The original recipe used less fat cream cheese.
  • While I'm sure the triple cheddar is amazing, white shredded sharp cheddar was in the fridge, that's what I used.
  • Go ahead and add a little more parm if you'd like...
  • My only addition was LOTS of fresh ground black pepper-yum!
  • Leftovers would be amazing on a bagel (Leftovers??? Actually, there probably won't be any, just whip up a batch for brunch:@)

  5. Yours looks great! Thanks for sharing with your readers :) Any cheese would work great and I like your addition of black pepper.   12. This looks great. I think I'd prefer the sharpness of good sharp cheddar in this and maybe a bit of finely diced onion. Going to have to try this out. I love veggie munchies with something like this. Hubs and I love to have a simple meal of sliced hard salami, ham, with cheese, and various veggies perfect for dipping in this.

  13. I don't like peppers - but I actually think this might change my mind. I am sure a roasted pepper would have great flavor. There you go again - perfectly cut carrots and celery. I wish you lived in my house : )

  15. I'm not a huge fan of red peppers, but I love roasted peppers. This looks like a winning snack to me. Sounds like you need to make yourself and Earl another batch to enjoy over the weekend!
