Chocolate Chip Muffins!

Otherwise known as, how to kiss up to your new boss! I've had this recipe for years and do really enjoy these muffins. Even though it calls for sugar and chocolate chips (I use semi-sweet) it's not overly sweet. Actually, I really like adding sanding sugar to the top before baking but forgot that this morning.

Chocolate Chip Muffins
2 C flour
1/3 C brown sugar
1/3 C sugar
2 tsp baking powder
1/2 tsp salt
2/3 C milk
1/2 C melted butter, cooled
2 eggs, beaten
1 tsp vanilla
chocolate chips, how ever many you'd like
nuts if desired
  1. Preheat oven to 400 degrees
  2. Mix dry, mix wet in separate bowl and add to dry. Stir till just combined.
  3. Add chips, fill cupcake papers and sprinkle with sanding sugar if using.
  4. Bake 15-20 minutes or until golden brown and done.

  13. You will be the "favorite" employee and getting the Employee of the Month" parking space before you know it! The boss will need a diet and your fellow workers will be so envious of your cooking and baking skills. Just keep "wowing" them with chocolate. Good to hear things are going well so far.

  14. You bring stuff like this to work and I'll hire ya! They look delicious even without the sanding sugar. I will have to make these soon! My motto is "If I can't wow you with brilliance, I'll baffle you with chocolate!" It makes sense when you have take a few vicadin.

  16. These are always my favorite along with chocolate muffins. It is always nice to have a place to take extra goodies. How fun. Glad it is going well. It is always nerve wracking to start a new job.

    I have been looking for sanding sugar and can not find it. My store doesn't carry it, which seems strange.
    Is it in the baking area of the groc. store, along with all the other sugars?
