Take your eggs out of the fridge and set aside.
Start by heating your pan for 4-5 minutes over medium heat (turn the knob of an electric stove to 5-6).
This is an 8" skillet.
Note: Every stove is different, it might take a try or two to figure out exactly how hot the pan needs to be and how long you want to steam the egg, but once you get it, it's very good!
**The key to this is letting the pan slowly heat to medium heat before you add the eggs.
**I use a non-stick pan. If not using non-stick you might want to add more butter or oil.

I love overeasy eggs, but I raise my blood pressure about 20 points each time before I even eat them - Ive tried to flip the little suckers - then my magic kitchen gnome who will remain nameless (cough-mr. foresterman-cough) has to come in and rescue them from me...now I can maybe make them again without pressure!!!
ReplyDeleteand yesterday i made that 1984 chocolate cake recipe you posted a while back - talk about MOIST!!and most importantly, I didnt screw it up, no rescuing involved!!! although it did stick in the pan, i must have not floured it enough...we just frosted the inside of the pan too and had doubles...
I love over easy eggs this way. I do make them like this but when I want the kids to oooh and aaah over how cool I am, I flip them. They think that is really neat.

ReplyDeleteOMG, I can't believe how easy this is and the eggs are cooked EXACTLY as I like them. I always end up breaking the yolk when I flip them, it's so annoying. I haven't had breakfast yet, I'm going to try this - thanks!
ReplyDeleteWe love eggs over easy, so this is always a great tip to have on hand. I use a similar method, but mine requires running water over the bottom side of the lid, then popping it over the pan. It works also. I hope you have a great day. Blessings...Mary

ReplyDeleteI call this method "a basted egg."and use it occasionally, but usually I just just flip my eggs over. I do love using butter for that special rich taste, although an egg cooked in bacon grease is still my absolute favorite! I'll probably die of a heart attack, right? LOL
ReplyDeleteI'm very fussy about my eggs- our favorite server at the Bob Evans Restaurant we frequent keeps an eye on the cook. If she eyeballs my eggs as being too overcooked, she has them re-done before she brings them out to me~ Is she good or what? LOL
