Holiday Pomegranate Jelly!

Hey everyone! Blogland is such an amazing place! I received an e-mail from the very generous folks at POM Wonderful asking if I'd like to try their pomegranate juice-you bet and thank you! 
We've all seen the pretty bottles at the store:
I do like to can jams and jellies and thought this was a great opportunity to make jelly for 
Thanksgiving and Christmas gifts!

Holiday Pomegranate Jelly
  • 3 1/2 Cups POM Wonderful
  • Zest of an orange
  • 2 Tblsp lemon juice
  • 3 cinnamon sticks
  • 5 C sugar 
  • 1 box dried pectin
Combine POM, zest, lemon juice and cinnamon in large pot-add pectin, bring to a boil stirring constantly.
Add sugar, stirring until dissolved and bring to a rolling boil, boil one minute stirring constantly.
Remove from heat, skim foam and remove cinnamon sticks. 
Can and process in a water bath for 10 minutes. *Please review proper canning procedure on-line.
Makes approximately 6 half pint jars.

What can you do with the jelly? Anything! 
  • Use it as you would any jelly
  • Brush it on poultry or pork (thin in microwave if necessary)
  • Add a little mustard, a splash of vinegar and some oil to make a salad dressing
  • Add it to the center of thumbprint cookies

  2. What a great idea! I'd love the jelly as jelly and I bet it would be great on chicken and pork and plenty more! Looks delicious, it's such a pretty color!

  12. I got it too, but we didn't like it as a juice, kind of bitter. I was looking for something to make with it! I think I will try a salad dressing.

  13. This jelly looks so pretty and is prefect for this time of year. I adore tangy pomegranates and buying the juice is genius! I think my family would love it on hot cornbread or rolls.
