Apple Crisp for One

Hi everyone! Fall is all about apples and I'm joining a new meme to me - Hearth 'n Soul Blog Hop, The Tablescaper for Seasonal Sunday and Chari for Sunday Favorites with a re-post of my apple crisp recipe. I originally posted this in April (that explains the tablecloth choice).

One of the hardest things to adjust to after the kids grow up and move out is how to cook smaller amounts of food. I'm sharing one of my favorites today, Apple Crisp.
It's my special Saturday morning breakfast treat.
I make it in a 5" ramekin (please excuse the cork trivet, this is real cooking here folks-that baby is hot!). 
I'm posting the recipe as I found it, and my "lighter" modifications.

Apple Crisp for One (or individual servings)
2 Tblsp softened butter - I use 1 Tblsp
2 Tblsp brown sugar - I use 1 Tblsp
3 A/P Tblsp flour - I use 1 Tblsp-whole wheat flour is nice
2 Tblsp oats - I use 1 1/2 Tblsp
1/8 tsp cinnamon - I don't add this
1 Apple, peeled and sliced - I use a sweeter one, Red Delicious, etc.
1 Tblsp raisins - I add them if I feel like it...

Add apples and raisins to baking dish, mix the rest together and crumble on top of the apples.
The original recipe says to cook it at 350 degrees for about 20 minutes. 
I have a countertop oven for small dishes like this, I use 400 degrees for about 18-20 minutes. Just check the apples to see if they've softened up, and that the topping is nice and brown.

  2. I love your new tablecloth..very pretty! And the apple crisp looks delicious. I make indiv ones 2..just 2 of us most of the time..don't like left overs like HAM forever..:)

  3. This is such a great idea! We will have a lot more room in our nest in a few years (it won't be completely empty because we have a midlife baby) but I have occassionally thought about how I will have to modify my recipes when I am cooking for fewer people.

    BTW, Your tablecloth is lovely!

  8. I kept cooking too much when my eldest first moved out but a friend of my youngest ended up eating with us most every night and picked up the slack. Lol. I love to feed people.
    I am glad you stopped by my site. That name really is a good one even if I do say so myself.
    I too love pigs and had a photo for years of a hairy pig who was so ugly he was adorable. He was the mascot for a police department. They call him Fuzz. Loved him.

  19. I LOVE apple crisp but have never thought of baking/serving it in individual bowls- a great idea and it makes a simple recipe somehow seem more special. I will have to try your recipe!

    I sooo agree! It's really difficult cooking for just one or two (in my case). I find that I'm still cooking as much but just end up freezing the extra or we eat leftovers! Thank the Lord my honey doesn't mind eating leftovers! Hehe! Your recipe for apple crisp sounds divine! It's been a long time since I've had that dish!   27. Yummm. Apple crisp is in the air! I did a post about an apple crisp this week too! I'll have to try yours. I understand about smaller versions. We're not big on desert so I prefer smaller amounts.

    I'm absolutely incapable for cooking for 1-2. It's like there's some part of me that is always cooking for an army. But at least there are always leftovers. This crisp is adorable.
