The only thing I changed was I added more pecten I had to add 3 teaspoons to get it to set which was still just fine because I still have some left over to make more small batches. Instead of cinnamon I added an eighth of a teaspoon of allspice it gave it a deeper flavor than the cinnamon would have it really complements the Mandarin oranges. It's absolutely beautiful in the jar and on the tongue.
